Someone told me this was similar to a Tiktok viral recipe (a Garlic Butter Steak Bites recipe) but honestly, I’ve been making one variety or another of this simple recipe for years and it reminds me most of a Beef Tips and Gravy recipe.
This recipe for Slow Cooker Steak Bites is a family favorite not only because we love the tender steak bites, but I also love the convenience of slow cooking on a busy weeknight. The recipe is full of great flavor and I daresay, the leftovers are even better!
The tender bites of steak in the delicious gravy is something the entire family will love. Make a pot of Instant Pot rice or creamy mashed potatoes with a side of green beans and you’ll have a complete meal.

Ingredients for Slow Cooker Steak Bites
Most of the ingredients for this steak bites recipe are pantry staples that you’ll already have on hand but they come together for a delicious, slow cooker meal.

- Sirloin steak, cut into bite-size pieces
- Kosher salt *see note
- Garlic powder
- Coarse ground black pepper
- Vegetable or canola oil
- Yellow onion, thinly sliced (or any sweet onion)
- Garlic, minced
- Water
- Low sodium beef broth
- Worcestershire sauce
- Au jus gravy mix packet
- Cornstarch *see note
- Butter, cut into pieces (salted or unsalted butter is fine, whichever you prefer)
- Chopped parsley, optional for garnish (or other fresh herbs, if you prefer a different flavor)

How to Make Slow Cooker Steak Bites
Making steak bites in crock pot is not hard! Here are the steps you’ll need to follow:
- If you haven’t already, cut the steak into small bite-sized pieces (around 1-inch cubes).
- Toss the steak cubes, salt, garlic powder, and pepper together to coat evenly.
- Heat a skillet over medium-high heat with 1 tablespoon of oil. Once hot, in batches, add the steak pieces. Sear the beef cube pieces, making sure to not overcrowd the pan and place in the slow cooker. Add more oil as needed to the skillet until all the beef is seared. Add to the slow cooker.



- Add the onions, minced garlic, water, beef broth, Worcestershire sauce, and au jus packet to the bottom of the slow cooker. Stir to combine. Cook on low for 6-8 hours or medium for 4-6 hours.



- Once your beef cubes are tender and cooked through, remove about ¼ cup of the liquid to a small mixing bowl. Add the corn starch and use a fork to mix it until there are no clumps left.
- Return this mixture to the slow cooker along with the butter and stir to combine. Turn the heat up to high and cook for 10-15 minutes or until the sauce has thickened.




- Serve the juicy steak bites over rice, mashed potatoes, or egg noodles, if desired. Steak Bites and Potatoes are the best combo if you ask me 😉.
- Add a garnish of fresh parsley before serving, if desired.

Pro Tips
- Other steak options that work well for Crock Pot Steak Bites: flat iron, chuck roast, or even beef stew meat. If you use a cheaper cut of beef, like round steak, make sure to cook it low and slow in the slow cooker to ensure it becomes as tender as it can be.
- If you use normal sea salt or regular salt, decrease the salt to 1/2 teaspoon.
- You can skip the cornstarch if you don’t want the juices to be slightly thicker like a gravy.
- I do not recommend skipping the searing. It adds so much flavor and gives the meat better color.
