How to Make Rainbow Tie-Dyed Cupcakes

These cupcakes are so easy to make and kids just eat them up! Buhahahaha! I’m so funny, right? Okay, not so much. Stay with me please – no more dumb jokes, I promise. Maybe.

White Cake Mix

Start with white cake batter. I used my easy-peasy vanilla cake recipe, substituting white chocolate pudding for vanilla (the vanilla pudding has a lot of yellow in it) and 4 egg whites in place of 3 whole eggs.

Next – divide the batter into four bowls. I used four bowls the same size and just estimated, but you could weigh the bowls if you want to be sure to get exactly even amounts.

Cake Batter with Electric Gel Colors

For my cupcakes, I used a few drops of each color and they were Americolor Electric Gel colors : Pink, Yellow, Green and Blue. You can use any colors you want – traditional or “electric”. You can also use more or less colors… four is a good number for me.

Now – line your cupcake pans with liners (about 3 dozen), then spray them with non-stick spray. Then begin spooning about 1-2 teaspoons of each color into each liner. I did all green, then all blue, then all yellow, etc.

Again, I didn’t measure these – I just eye-balled it. I’ve done thousands of cupcakes and I just have a good feel for the right amount.

At this point, you could swirl it together a bit, but I just leave it as is. Then bake – I bake them at 325°F for 18 minutes.

And that’s it! I let these cool overnight, then I piled on some bright yellow vanilla buttercream:

The next time I made these, I used white liners so you could see the colors through the liner. But even still… when you peel back the liners – they’re just WOW!
