Corn & Mac Casserole

Corn & Mac Casserole. Doesn’t that sound yummy? My littlest cutie-pie kiddo Asher loves Mac & Cheese. No. That’s not enough. He really, really loooooooves Mac & Cheese. Next to popcorn, it’s his favorite thing ever. Well, that, and french fries. And scrambled eggs.

Up until recently – that’s what he’d ask for to eat at every mealtime. Mac & Cheese, French Fries, Scrambled Eggs, or Popcorn. A few weeks ago, he added corn to the list. Now he asks to eat corn every day. Are you seeing the pattern yet? The child loves orange/yellow food. I’m not sure he recognizes this as a pattern (he doesn’t actually  mention the color of any of it), but he’s certainly hitting on a trend.

Anyway – a few days ago he asked for Mac & Cheese with corn in it. For a moment I wondered why that sounded familiar, then I realized it was because I used to make a similar recipe all the time. It’s been ages since I made it and I had to dig deep in my drawer to find the recipe but finally, I came upon this…

Clearly it’s a recipe I used to make a lot. And this past week… I made it again. Twice!

This recipe is super easy and really, really good. You can literally have it mixed up and in the oven in under 10 minutes – which is my kind of cooking! The second time I made it was for potluck at church and I threw it together just an hour before church and it was ready to go for lunch that day!

I doubled the recipe and baked it in a 9×13 (see above). I also changed the cubed cheddar to shredded (from my ‘original’ recipe), but otherwise, it’s the same as I made it in the past! And by the way – Asher loved it!

Description

This easy Corn & Macaroni Casserole is perfect for a family gathering or delicious potluck dish!


Ingredients

Units Scale
  • 1 can of creamed corn
  • 1 can of whole kernel corn (do not drain!)
  • 1 (4 oz.) stick of salted butter, melted
  • 1 cup shredded cheddar (4 oz.)
  • 1 cup uncoooked macaroni noodles

Instructions

  1. Preheat oven to 350°F. Spray a 2 quart baking dish with non-stick cooking spray.
  2. In a large bowl, mix together all ingredients then pour into the baking dish.
  3. Bake for 40 minutes. Allow to cool for 10 minutes before serving. Enjoy!

  1. Oh my goodness- it’s two of my FAVORITE foods… mac ‘n cheese and corn! Starches all around! I can’t wait to try this. Of course I only cook once in a blue moon- but this sounds like a great side for some grilled chicken or even burgers. Blessings! -Kelly
