Having a big family and a busy life (as we do), over the years I've learned to simply and streamline some things, to make room in our life for more things. One thing that I've gotten pretty good at is making big, easy, yet filling, delicious meals that my family loves to sit down and share together and Italian-inspired meals are always our favorites. This Easy Chicken & Broccoli Alfredo is one of those meals.
I like to make delicious meals but I don't usually have the time to do intricate detailed recipes that take a lot of time. I'm always looking for shortcuts that save time, but don't skimp on quality or flavor. For this recipe, I use frozen broccoli, rotisserie chicken and Bertolli Creamy Alfredo Sauce to make preparations go fast without sacrificing all the good stuff.
We all love this dish so much and even better, being able to pull it together quickly means that we our family night comes together without a lot of stress or hours spent in the kitchen. That's a win-win!

Here's what you'll need:
- 1 pound of dry pasta
- 10 oz. frozen broccoli florettes

1 jar Bertolli Creamy Alfredo
-
2 cups shredded, cooked chicken, I use Rotisserie

½ cup shredded Parmesan, optional

salt & pepper to taste
Please note: in my pictures that I've doubled everything listed in the recipe. That's because there are 8 of us and with my husband and son both working full-time, they also take leftovers for lunch the next day, so I need a minimum of 10 servings for almost any meal I create. This doubled meal made around 16 servings so all the kids ate it for lunch the next day too, but most of you won't have that situation and can leave the recipe as is (single version).
This recipe is so easy... cook the pasta according to package directions, except you drop the frozen broccoli in for the last 3 minutes of cooking. Then add the cooked chicken and sauce while the pasta is still hot and stir it up... sprinkle on a little fresh Parmesan and it's done! I serve it with hot bread sticks and we call it a meal!
Seriously, you cannot dream up a simpler, more scrumptious meal! My kids rave about this every time we eat it and always ask for seconds and if I let them, they'd lick the bowl clean 😉 !

Easy Chicken & Broccoli Fettuccine Alfredo

Description

Ingredients
- 1 pound of dry pasta
- 10 oz. frozen broccoli florettes, chopped small
- 1 jar Bertolli Creamy Alfredo
- 2 cups shredded, cooked chicken, I use Rotisserie
- ½ cup shredded Parmesan, optional
- salt & pepper to taste
Instructions
- Cook pasta according to package directions (be sure to salt the water!). During the last 3 minutes of cooking, stir in the chopped, frozen broccoli.
- Drain immediately and mix in the chicken and Bertolli Creamy Alfredo while the pasta is still hot. Add salt and pepper to taste. Garnish with Parmesan.
- Prep Time: 10 mins
- Cook Time: 15 mins

I have not but I know it's always recommended that if you plan to freeze a pasta dish, you should only cook the pasta until it's al dente. It will get soggier in the freezer so by not fully cooking it, you'll have better results when it's thawed and warmed.
