Ingredients for Chicken Spaghetti:
1 pound boneless skinless chicken breasts
2 cups chicken stock
2 cups diced tomatoes
1 8 oz can diced green chiles
1 tablespoon cumin
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon black pepper
8 oz cream cheese
2 cups sharp cheddar cheese, shredded
1 cup pepper jack, shredded
1 8 oz package thin spaghetti
Directions for Chicken Spaghetti:
In Instant Pot, add chicken stock, chicken, tomatoes, green chiles, cumin, garlic powder, onion powder, paprika, and black pepper.
Place lid on Instant Pot and set to seal.
Cook on Manual High heat for 15 minutes.
All it to naturally release pressure.
Remove lid and use forks or tongs to shred chicken and mix together.
Break up thin spaghetti into smaller pieces and mix into the pot with chicken and cheese mixture.
Mix in cheeses and stir until well combined.
Turn to saute feature, and allow to cook for additional 10 minutes stirring occasionally. May add some additional chicken stock if sauce is too thick for your preferences.

Next time I think I would either drain the tomatoes and chiles, or add less chicken stock.

If it's sticking it needs more liquids. Also never stir the pasta. Just break & fan it on top. Make sure liquids cover it.

This was really great tasting.... but I seriously had to continuously stir while simmering the spaghetti. I think next time I’ll do the spaghetti 3 min on high pressure then add cheese and stir on simmer a few minutes to melt cheese

This is my favorite instant pot recipe! I usually leave out the cheddar and pepper jack because the cream cheese makes it perfectly creamy. And after adding the noodled I add an extra 2 cups of chicken broth so the noodles don't stick. Then I turn it on warm or slow cook and let it thicken. I've made it so many times and make it for parties. My friends, my boyfriend, and myself all love it!
