Frozen S'mores
We love s'mores around here - as indicated by our S'mores Cupcakes, S'mores Charcuterie Board, S'mores Rice Krispie Treats and Baked S'mores! Yeah - we are big fans of this classic treat!
But on a hot summer day, we don't always want to heat up the kitchen or build a campfire to enjoy the flavor of s'mores. That's why these Frozen S'mores Bars are the perfect cold treat.
But s'mores aren't just for summer. It's so hot here in the south that we actually have them more often in the Fall when it's cool enough to have a fire in our firepit.
And since it is still summer, but Fall is so close around the corner that I can taste it, I thought it would be a perfect time to share this fun treat!
What are S'mores?
Traditional s'mores are made by melting a marshmallow (usually over a campfire), then placing it on a graham cracker, adding a piece of chocolate (usually a piece of a Hershey bar at our house), then squishing it into a sandwich with another graham cracker.
Frozen S'mores Recipe
Frozen S'mores are a fun twist on this classic treat - the marshmallow layer is a mix of cream cheese, Cool Whip and marshmallow flavors, then frozen and dipped in melted chocolate.
You get all the same flavors in a whole new dessert. And they are fantastic!

Ingredients
- Cream Cheese, room temperature
- Cool Whip, thawed
- Milk, whole milk is best
- White Chocolate Instant Pudding Mix
- Dehydrated Marshmallows - these little mini marshmallows are so much fun (like the ones found in hot chocolate packets) and give the cream cheese filling a little extra texture!
- Marshmallow Ice Cream Topping - this is easy to mix into the s'mores filling because it's more like a marshmallow sauce. You could also use Marshmallow Creme.
- Graham Crackers
- Chocolate Almond Bark - you could also melt chocolate chips or baker's chocolate to dip the s'mores. I prefer milk chocolate or semi-sweet chocolate, but you could definitely use dark chocolate if you'd like a more decadent treat. Ghiradelli Melting Wafers would also work great!
- White Melting Wafers
- Sprinkles (optional)

How to Make Frozen Smores
This frozen s'mores recipe is really easy to put together. In about 15 minutes, you can have them prepped and ready for the freezer!
- Add your cream cheese, Cool Whip, milk, pudding mix, dehydrated marshmallows, and marshmallow topping to a stand mixer (or into a mixing bowl and use a regular mixer).
- Mix on high speed until well combined and stiff peaks have formed (5-10 minutes)
- Break graham crackers in half and lay out a dozen of them on a baking sheet.
- Add the cream cheese mixture to a piping bag and pipe onto the bottom layer of the graham cracker squares.
- Top with the remaining graham crackers.
- Place in the freezer for 4 hours.
- Place your almond bark in the microwave for one minute. Stir and repeat until melted, stirring after each minute, until smooth.
- Dip each s’more halfway into the melted chocolate and place on parchment paper to set. Top with sprinkles immediately (if desired). Once the chocolate is set, melt down your white candy melts (if desired). Place in a piping bag and drizzle over your s’mores.
- Serve frozen and enjoy! A cool treat for summer!
Variations
Triple Chocolate Frozen S'mores: Use chocolate graham crackers, instant chocolate pudding mix in the marshmallow mixture, and chocolate dip for the outside. Pipe the chocolate pudding mixture on the inside of the s'more sandwiches the same as you would the original, then top with another graham cracker and dip and drizzle with even more chocolate. Yum, yum, yum!
Peanut Butter Cup Frozen S'mores - drizzle melted peanut butter chips over the chocolate layer!
Storage Directions
The best way to store these s' mores squares is to wrap them individually in plastic wrap, then place them in a sturdy freezer-safe container so they won't get crushed in the freezer.
You could also wrap them in small freezer bags or aluminum foil before putting them in a container. It's important to wrap them individually so you can take out as many or as few as you need at one time.

- ¾ cup of Milk
- 2 (3.3 oz) packages of White Chocolate Pudding Mix
- 1 cup of Dehydrated Marshmallows
- ¼ cup of Marshmallow Ice Cream Topping
- 12 Graham Crackers
- 1 lb. of Milk Chocolate Almond Bark
- ½ cup of Melted White Melting Chocolate
- Sprinkles (optional)
