I don't feel like I've talked about it here a lot on the blog, but I love Mexican food. Not necessarily fancy Mexican food. Just the basics... tacos, enchiladas, quesadillas, chips, salsa... you know, the good stuff.
We have tacos at least once a week here at the Atwater house and this homemade salsa with chips makes a regular appearance too.
My appreciation for Mexican food was taken to another level on our recent trip to Mexico. I mean the authentic carne asada with fresh pico de gallo blew my socks off. But that's a post for another day.
Today let's talk about one of my other favorite Mexican foods... quesadillas.
I particularly love quesadillas because my kids can make them without any help! Also, they're perfect for an easy lunch, ready to eat in minutes and my kids make them for lunch all the time.
Usually, they're just cheese quesadillas. Other times we add some shredded chicken or salsa or top with sour cream. Or all of the above 🙂
I'm also known to make quesadillas as an appetizer for a party - they're so easy and fast - you can make them for guests on the spot or make them ahead and keep them warm!
Recently I wanted to jazz up our traditional (and plain) quesadillas with pimento cheese and a little kick of jalapeño.
And WOW - can I just pat myself on the back and say this was a brilliant idea that I had? These Spicy Pimento Cheese Quesadillas are crispy and buttery on the outside and filled with ooey-gooey melted cheese and jalapeños on the inside.
They're perfection I tell ya. Pure, delicious, perfection. And seriously - there is not an easier meal out there! With only 4 ingredients and a fast cook time - you can have a meal in under 10 minutes!
First, pick up some Pimento Cheese at your local store or if you're really feeling adventurous, use this recipe to make your own homemade pimento cheese! You'll also need tortillas (I used large burrito sized ones), butter, and jalapenos:

Spicy Pimento Cheese Quesadillas
Let me show you how I made them...
First I chopped up some jalapenos and mixed them into the pimento cheese...
Now it's time to cook! I have a short video for you :
As you can see, you just drop some butter in a hot skillet and lay one tortilla on top. As that starts to brown, brush the top side with softened (or melted butter). Then spread on about ¾ cup of the Price*s Pimento Cheese mixture (use less if you're using smaller tortillas).
Cover with another tortilla - flip and brown... and you're DONE!
I love to serve this spicy cheese quesadilla recipe with a little dollop of sour cream!

Spicy Pimento Cheese Quesadillas (4 Ingredients!)

Description
These Spicy Pimento Cheese Quesadillas are crunchy, creamy, spicy & delicious. They have only 4 ingredients, are easily ready to eat in less than 10 minutes and packed full of flavor and texture.
Ingredients
3 Tbsp. butter, softened
¾ cup Price*s Original Pimento Cheese Spread
3-4 rings of jalapeno, diced
Instructions
Using fresh or jarred jalapeños, slice 3-4 rings. Stir into pimento cheese in a small bowl.
Add 2 Tbsp. butter to a hot skillet and melt. Place a tortilla into the skillet. While it browns, brush the top side with melted or softened butter.
Once the bottom side is hot and starting to brown, flip the tortilla in the skillet. Spread the pimento cheese mixture onto the hot side. Top with another tortilla and press to seal the edges.
Cook 1-2 minutes or until browned and crispy.
Remove from the skillet, slice and serve with sour cream.
