A Chocolate Chocolate 40th Birthday Cake.  Yes, it's double chocolate 😉  I couldn't think of a more creative name for this cake, so that one will have to do.  It's Day 8 of the Write 31 Days challenge and this post will be pretty short & sweet.
After my very long and stressful day yesterday and a good but busy day today... I'm exhausted so I really just don't have a lot of umph left in me to write a long post.
I did this cake way back in 2014 (I think) and if I remember correctly, I didn't have a lot of notice before doing it. Â I have a dear friend who is a restaurant owner and caterer and she faithfully refers her clients to me for wedding & event cakes.
She's been so good to me (and good for my business) that I always try to accommodate her when I can. So when she asked for this cake - an all chocolate - all buttercream cake... I immediately agreed to do it!
She didn't ask for any specifics on the design or details so I had free reign to do it as I wanted.  I've always admired all the different textures and looks for multi-tiered buttercream cakes so I picked three different textures and ran with it.
I even made the topper out of melted chocolate... I just piped out the "40" on wax paper and attached lollipop sticks... easy-peasy!
A Chocolate Chocolate 40th Birthday Cake
The cake was 3 tiers of rich, dark chocolate cake with chocolate chips. Â The tiers were 6", 8" and 10". Â It was filled and frosted with chocolate buttercream.
I piped the roses with a Wilton 1M and the ruffles with a Wilton 104. Â The middle tier was smoothed with my 9" spatula and my favorite bench scraper.
And I think that's all I can tell you about this cake.  If you have any other questions that I didn't address, please leave me a comment and I'll do my best to answer!
Happy Caking!

Thank you!

That is an Awesome cake... How did you create it? Is there a class on how to create using these techniques?
Rose
There are several Craftsy classes on buttercream techniques, but I'm not sure if they cover these exactly.

Hello
How did you layer the cake? Are they on cake boards? Also, how did you get the different shades of chocolate buttercream
Please? Thank you!!! 🙂
Rose
Yes, I use cake boards and bubble tea straws to stack my tiers. You can see my tutorial here: How to Stack Cakes. I added some dark chocolate cocoa powder to the frosting for the bottom tier to get it a bit darker than the rest.

Hi Rose!! My 12 year old daughter has been baking with me since she was a toddler and has now taken on many new things on her own - including cakes and decorating! She recently made the double chocolate cake recipe from your book, Cake Decorating for Beginners, as a 3 layer cake and it was amazing!! She wants to try to make it into cupcakes but we are unsure how long to bake them. Do you have advice? Thank you!

Thank you for buying my book for her - this makes me SO happy!! I bake almost all of my cupcakes at 325°F for 18-20 minutes!
