Corn Dog Casserole
I found this recipe in a magazine years ago, and it’s still a huge hit at our house. We eat it with ketchup and/or mustard…just like a corn dog!
My kids were little when I first started making this. In fact, it was at least 16 years ago, meaning my oldest was 13 and my baby was well… a baby. I was homeschooling 4 or 5 kids at the time, along with working at my new home cake business and just trying to survive.
At that time, our budget was tight, as was my patience, so I relied heavily on one-dish meals like this Corn Dog Casserole.
Was it healthy? Not-so-much. But I’d add a can of green beans or some broccoli as a side, and we’d call it a win!
Why You’ll Love This Recipe
It’s so inexpensive. A package of hot dogs and two boxes of Jiffy mix will feed a whole table full of people. When you’re stretching a grocery budget across a big family (or just trying to get to payday), this is the kind of recipe that saves the day.
It’s genuinely simple. You brown the hot dogs in a skillet, stir everything together in one bowl, and pour it in the pan.
It’s a familiar, kid-friendly flavor. Cornbread, cheddar, and hot dogs are three things most kids already love, so this one is a no-brainer.
