Mini Pancakes

Pancake lovers – I have something fun and special for you today!

These adorable mini pancakes first showed up on my Brunch Charcuterie Board, stacked on little skewers with fresh berries… and honestly, they stole the show! They were way too cute to stay tucked inside another recipe, so they get their very own post today.

As a busy mommy and self-employed girl, I know how much it helps to have an easy breakfast option that still feels a little bit special. These tiny pancakes are exactly that. They give you the same comforting taste of fluffy pancakes, just in miniature form!

And everybody loves mini food, right!? Mini Muffins, Mini Gingerbread Cookies, Mini Peppers, Mini Cheeseballs, Mini Bundt Cakes… you get the idea!

Why You’ll Love This Recipe

Simple pantry ingredients. You only need a handful of pantry staples you probably already have, so there’s no special trip to the store to make these small pancakes.

Perfect for little hands. Bite-sized pancakes are easy for kids to pick up, dip, and eat without a fork (and without a big sticky mess, most of the time).

Made for brunch boards. Stack them on skewers, pile them on a platter, or add them to a board. They’re such a fun way to serve pancakes to a crowd.

Tools Needed

  • Large mixing bowl
  • Whisk
  • Measuring cup and spoons
  • Squeeze bottle with a fairly large tip
  • Griddle or large non-stick skillet
  • Small spatula
  • Cocktail picks (optional, for skewers)

Ingredients

You can make these delicious mini pancakes with basic pantry ingredients:

  • All-purpose flour (or gluten-free flour)
  • Baking powder
  • Sea salt
  • Large egg
  • Buttermilk (no buttermilk? See the tip below!)
  • Melted butter, salted or unsalted butter both work

How to Make Mini Pancakes

The squeeze bottle is the secret here… it keeps every pancake the same size and makes the whole thing go so much faster.

  1. In a large bowl, whisk together the dry ingredients until combined.
  2. Add the wet ingredients and whisk just until the pancake batter comes together. A few small lumps are totally fine.
  3. Carefully pour the batter into a squeeze bottle.
  4. Heat a griddle or nonstick skillet over medium heat and lightly butter it.
  5. Squeeze quarter-size dots of batter onto the griddle. Flip after 1 to 2 minutes, once you see little bubbles on top.
  6. Cook until golden brown on both sides, then move them to a plate or baking sheet.
  7. For pancake skewers, slide the little pancakes and fresh berries onto cocktail picks, or stack a few pancakes and top with a berry.

Pro Tips

  • No buttermilk? Add 1 tablespoon of lemon juice into a cup of milk (whole milk or almond milk) and give it a quick stir then let it sit for 5 minutes. See my buttermilk post here.
  • Room temp is best! Let the melted butter cool a littl and bring the egg and buttermilk to room temperature so the butter doesn’t clump up.
  • Mini pancakes cook fast! Turn it down to medium-low heat if they’re browning too quickly, and skip high heat altogether.
  • Better with butter. Between batches, wipe the griddle with a paper towel and add a little butter.
  • Serve them warm! To keep them warm, spread them in a single layer on a baking sheet in a 200°F oven.

Variations

  • Add a teaspoon of vanilla extract to the batter for a little extra flavor.
  • Sprinkle mini chocolate chips or blueberries onto each pancake right after you squeeze it out.
  • Swap half the flour for whole wheat flour for a heartier pancake.
  • Make pancake cereal! Serve a bowl of tiny pancakes with maple syrup or milk for a fun twist kids love.
  • Prefer larger pancakes? Use the same batter for silver dollar pancakes about 3 inches across.

Serving Suggestions

Serve these cute pancakes with maple syrup, chocolate sauce, peanut butter, Greek yogurt, or fresh fruit. They’re a crowd-pleasing brunch idea on my Brunch Charcuterie Board, alongside bacon, sausage, eggs, mini waffles, and mini muffins.

Storage Instructions

Store leftover pancakes in an airtight container in the fridge for up to 4 days. To freeze, lay them in a single layer on a baking sheet lined with a piece of parchment paper, freeze until firm, then move them to a freezer bag for up to 2 months. Reheat in the microwave for a few seconds and they’re ready for busy mornings at a later date.

FAQ

Can I use pancake mix instead? Absolutely! Mix your favorite pancake mix according to the box, pour it into a squeeze bottle, and follow the same steps.

What’s the difference between mini pancakes and silver dollar pancakes? Silver dollar pancakes are usually about 3 inches wide. Mini pancakes are even smaller, about the size of a quarter.

Can I make them ahead? Yes! Make them a day ahead, store them in the fridge, and warm them up right before serving.

These delicious mini pancakes are one of my favorite ways to make an ordinary breakfast feel like a special occasion. Pile them high, add your favorite toppings, and have so much fun with them!
