Churro Cheesecake Bars Recipe
Y'all - this is one of the best things EVER. Churro Cheesecake Bars have the flavor of a classic cheesecake with lots of cinnamon sugar for churro flavor. Add the buttery crust from the crescent rolls pastry dough and it's a new favorite!
It's such an easy recipe and a perfect dessert for the Thanksgiving and Christmas holidays, Cinco de Mayo, or pretty much any other time of year. You can't ever go wrong with this Churro Cheesecake Recipe!
What are Churros?
Churros are a popular fried pastry made from a simple dough of flour, water, and salt. The dough is piped through a star-shaped nozzle and fried until golden and crispy. After frying, churros are rolled in cinnamon sugar, creating sweet cinnamon treats.
Similarly, sopapillas are another traditional Mexican dessert with the classic cinnamon sugar flavor, so this Cheesecake Churro might also be called a Sopapilla Cheesecake.
Churro Cheesecake Ingredients
There are only 6 simple ingredients in this Churro Cheesecake recipe!
Canned Crescent Rolls - or you can use the crescent roll sheets
Cream Cheese - I do not recommend using fat-free cream cheese in this recipe. The cheesecake mixture just doesn't have the right texture.
Vanilla Extract - store-bought or homemade vanilla
Eggs - large eggs at room temperature
How to Make Churro Cheesecake
- Preheat oven to 350ºF. Prepare a 9x13 baking pan with non-stick spray.
- In a large bowl, combine cream cheese, sugar, vanilla, and eggs together, and beat until smooth.
- Great a 9x13 inch pan, and lay one can of crescent rolls in the bottom of the pan for the bottom crust.
- Pour cream cheese mixture on top, and spread out evenly.
- Layer the second can of crescent dough on top of the cheesecake layer. Note: if the dough is longer and wider than your pan, you can either cut the excess dough off, or press it into the sides, creating kind of a pie shell. If the top is too large, you can again, either cut it off, or roll it under.
- Combine cinnamon and sugar in a small bowl; sprinkle on top of the dough.
- Bake in preheated oven for 30-35 minutes, until the dough has turned golden brown underneath the cinnamon sugar mixture on the top crust. The cheesecake will probably have bubbled up during baking, but it will mostly sink back down as it cools.
- Allow to cool, and for best results, refrigerate at least 2 hours before serving.
Pro Tips for Churro Bars
- If your crescent roll dough is tearing, you might spread it out on a work surface and gently roll over it with a rolling pin to seal up the perforated seams.
- Having trouble smoothing out the dough? Put a layer of wax paper over the first layer of dough, then use your hands to press down and flatten the dough.
- Cut these into very small cream cheese squares for Churro Cheesecake Bites. This would be an irresistible dessert!
Serving Suggestions
- Drizzle with dulce de leche or caramel sauce for an extra decadent dessert!
- Top with whipped cream and/or fresh fruit, like strawberries!
Storage Instructions
- Cool the Cheesecake: Allow the churros cheesecake to cool completely to room temperature after baking if it's freshly made.
- Wrap Properly: Cover the cheesecake with plastic wrap or place it in an airtight container. You can also wrap it with aluminum foil if you don’t have plastic wrap.
- Refrigerate: Store the churro dessert in the fridge for up to 3-4 days.

Eggs are a key ingredient in cheeseakes because they help with the creamy, smooth texture and richness of the dessert.
