Candy Corn Marshmallows
It's no secret Candy Corn is my most favorite fall snack. I actually don't eat a lot of candy but I can take down a bag of Candy Corn in no-time-flat. And it really seems like Candy Corn gets more popular every year! This year, I bought my first bag in August - the minute the stores started putting out Fall & Halloween treats.
So anyway, I also love marshmallows in hot chocolate so this seemed like a perfect fall treat. They don't taste like Candy Corn (for you haters out there - I know you're reading). But they're super cute and perfect to stir into hot chocolate or just eat on their own if you enjoy a chocolate-dipped marshmallow!

What does all this mean? It means you can have Candy Corn Hot Chocolate without the flavor and texture of candy corn. Win-win for some of you!
These have the sweet taste of white chocolate on the outside and the fluffy texture of marshmallows on the inside. Instead of regular Jet-Puffed Marshmallows, you'll be using the square ones made for s'mores.
Years ago I shared these Peppermint Dipped Marshmallow Pops for Christmas and people went nuts for them so I'm hoping these Candy Corn Marshmallow Pops will be just as popular!
Supplies Needed

Candy Corn Marshmallow Pops Ingredients:
- Square Marshmallows
- White Candy Melts + Orange Candy Coloring & Yellow Candy Coloring
- OR Orange Candy Melts & Yellow Candy Melts
Note: Note: Square marshmallows are also called S'more Marshmallows or Campfire Marshmallows (depending on the brand you purchase). If you're unfamiliar with them, they're next to the regular marshmallows in grocery stores and seem to be more popular in the fall when it's bonfire and S'more making season!

Candy Color OR Colored Candy Melts?
In the ingredients list above, I mention that you can use white candy melts with candy coloring, OR you can use colored candy melts. For my tutorial, I used candy coloring because that's what I had on hand. But if I'm being honest, the pre-colored candy melts would be so much easier.
Here's why: you can't just grab any "regular" food coloring to color candy melts. Chocolate or candy coating will seize if you add water-based food coloring to it. So you have to get coloring specifically made for candy (or chocolate making). I most often use Wilton Candy Colors, which I can almost always find at Walmart, and they include yellow and orange!
Candy coloring is not as common in grocery stores. But you can usually find it in hobby stores, cake shops, or of course, Amazon. But the easier thing would just be to buy some orange candy melts and some yellow candy melts.
How to Make Candy Corn Marshmallows
These perfect Fall treats are so super easy to make - you're going to love them!
- Start by placing the square marshmallows on the ends of your straws. If you want a little extra assurance that the marshmallow will stay in place, you can put a small amount of melted chocolate on the end of the stick before sticking the marshmallow on it.
- Using your knife or kitchen scissors, cut each marshmallow into a triangle.
- Melt your candy melts in two separate microwave oven-safe bowls or cups. Or if you're using pre-colored yellow and orange candy melts, melt them into separate bowls. You will want to melt them in small increments (10-15 seconds, stir, repeat until smooth).
- Add orange food coloring to one, and yellow food coloring to the bother, stir well. Make sure you use oil-based candy coloring - water-based food coloring will cause the chocolate to seize.
- Dip your marshmallow in your orange melted chocolate first (almost to the top of the marshmallows).
- Place on a baking pan lined with parchment paper. Then place in the fridge for 10 minutes and allow it to harden.
- Drip the bottom of each marshmallow in your yellow chocolate.
- Place in the fridge for 10 minutes and allow to harden.
- Serve with hot cocoa and enjoy!

Pro Tips
You could also melt your candy melts in a double boiler on the stovetop but it's so much easier and faster if you have a microwave.

FAQ
Candy melts can clump or seize for a few reasons:
Overheating: Candy melts can become clumpy if they are overheated. They need to be melted slowly, preferably using a double boiler or by microwaving in short intervals, stirring in between.
Moisture: Even a small amount of water or steam can cause candy melts to seize up and clump. Make sure all your utensils and bowls are completely dry before you start melting.
Improper stirring: Stirring too vigorously or using the wrong tool (like a fork) can introduce air bubbles or cause the candy melts to seize. It's best to stir gently with a spatula.
Expired or old candy melts: Candy melts that are old or stored improperly can lose their smooth melting quality, leading to clumping.
Contaminants: Introducing other substances, like extracts or colorings that aren’t oil-based, can cause the candy melts to clump. Always use oil-based additives when working with candy melts.
To fix clumpy candy melts, you can try adding a small amount of vegetable shortening or paramount crystals and stirring gently until smooth.
To thin candy melts and achieve a smoother consistency, you can use the following methods:
Paramount Crystals: These are small flakes of partially hydrogenated palm kernel oil, specifically designed for thinning candy melts. Add a small amount (a teaspoon at a time) to the melted candy melts and stir until smooth. Keep adding until you reach your desired consistency.
Vegetable Shortening: If you don't have paramount crystals, vegetable shortening is a good alternative. Add about 1 teaspoon of shortening per 8 ounces of candy melts, then stir until fully incorporated. If needed, add more shortening, a little at a time, until the melts are thin enough.
Cocoa Butter: This can also be used to thin candy melts. It’s especially good if you’re working with chocolate-flavored melts, as it won't alter the taste. Add a small amount, melt it, and stir into your candy melts.
Oil (Vegetable or Coconut): A little bit of oil can help thin the candy melts. Be cautious with the amount you add, as too much oil can make the melts too thin and affect how they set.
Remember, when thinning candy melts, always add your thinning agent gradually to avoid making them too runny.
