Tools Needed
- Ziploc Bag (gallon-size) and Rolling Pin OR

- 9x13 Baking Dish (or 7x11 will work)
- Nonstick Cooking Spray

Ingredients
The ingredients for this Lemon delight are common and easy to find at any grocery store.
- Lemon OREOs
- Butter, melted (I use salted, but unsalted butter would work just as well)
- Cool Whip
- Package of Cheesecake Pudding Mix
- Milk - I use whole milk, but 2% would work as well
- Lemon Pie Filling
- Vanilla Frosting
- Lemon Slices
Substitutions
Lemon OREO Crust - If you want to cut the lemon flavor of the cookie crust, instead of the Lemon OREOs, you could use Golden OREOs for a Golden OREO crust. A graham cracker crust is another option but I recommend the cookies if possible!
Cheesecake Layer - I love, love, love the cheesecake pudding mix for a cream cheese layer but in a pinch, you could use other instant pudding flavors like instant white chocolate pudding or instant vanilla pudding.
Lemon Pie Filling - Instead of lemon pie filling, you could easily use lemon curd (homemade recipe here) or store-bought. Another option would be to double up on the instant pudding mix and use instant lemon pudding for a lemon pudding layer instead of lemon pie filling.
Vanilla Frosting - For ease, I grabbed a can of store-bought frosting but you could easily make your own buttercream frosting or for a lighter finish, use canned whipped cream or use heavy whipping cream to make homemade whipped topping to decorate the top.
How to Make Lemon Lush Dessert
This is a no-bake dessert lasagna that you're going to love. It's an easy recipe to put together and always a crowd favorite.
- Place OREOs (40 cookies) in a Ziploc bag. Using a rolling pin, roll the bag out until your OREOs are fine crumbs. I leave a corner open to prevent the bag from popping. You could also use a food processor if you have one!
- Melt butter in a microwave-safe bowl.
- In the medium or large mixing bowl, mix your crumbled OREOs and melted butter together until you have a very fine mixture. Press the OREO crumbs into the bottom of a baking dish. I spray mine with cooking spray beforehand.
- Next, add your milk to your pudding mix, and whisk until well combined. Let stand for 5 minutes.
- Add half of your Cool Whip to your pudding and mix well. Pour over the cookie mixture and smooth out evenly.
- In a medium bowl, add together your lemon pie filling and remaining Cool Whip. Mix until well combined and pour over your pudding layer. Smooth out evenly.
- Place your container of frosting in your piping bag and pipe around the edges of your cake.
- Crumble up 15 OREOs, in the same manner as before, and top the center of your cake.
- Put two lemon slices in the center and refrigerate for 4 hours, until nice and cold, or place in the freezer for 1 hour.
- Serve and enjoy. The perfect dessert for all the lemon OREO lovers!
