No Churn Blueberry Ice Cream Recipe
This No Churn Blueberry Ice Cream is a super simple treat for a hot spring or summer day! My kids LOVE ice cream. They would eat it all day in the summer months if I gave them the chance. And when we make it homemade? It doesn't stand a chance of lasting more than a day!
We picked blueberries for the first time this weekend and I've been obsessed with blueberries lately (like this blueberry layer cake). So for this recipe, I chose to add a blueberry puree. Blueberries add a very unique flavor to any dessert and this is a great way to use them up if you have an abundance (we always do).
In the end, this homemade blueberry ice cream recipe is the perfect blend of creamy goodness and bursting with the flavor of blueberries.
Unlike traditional ice cream, this no-churn delicious ice cream is surprisingly easy and this particular recipe has only three base ingredients.

Ingredients
- Sweetened Condensed Milk
- Heavy Cream - be sure it's very cold
- Vanilla extract
- Blueberries - I love to make this in the summertime with fresh blueberry flavor but you could use frozen blueberries if that works for you!
- Walnuts - I suppose these are optional, but they add so much extra flavor and contrast the creamy texture!
How to Make Blueberry Ice Cream
- Puree blueberries in a food processor or 15-20 seconds until smooth. If you want to leave some bigger chunks of blueberries in the puree, by all means do! I love the extra texture.
- In a large bowl (or the bowl of a stand mixer), beat heavy whipping cream until stiff peaks form. Use a whisk attachment if you have one - it will make the process go faster.
- Add sweetened condensed milk, vanilla extract, blueberry mixture and walnuts to the whipped cream. Fold together until well combined. Use a rubber spatula to scrape down the bowl and make sure the fruit and nuts are evenly spread throughout the ice cream.
- Next, spoon the ice cream mixture into freezer safe container and add chopped walnuts and a handful of whole blueberries on top of the ice cream.
- Freeze for 5-6 hours or overnight. when it is time to serve, remove the container from freezer and let sit on the counter for 5-10 minutes before serving to soften.
- Scoop it out with an ice cream scoop, add any toppings you want and enjoy!!
Variations
Because the ice cream base is a very simple vanilla ice cream, you could easily change it up. If you're not a fan of blueberries, you could use any kind of berry in it's place. For instance, strawberries or raspberries would be delicious. You could also combine blueberries with another fruit (or two) to make a different flavor.
Serving Suggestions
You can serve this in ice cream cones or bowls! I have a recipe for homemade waffle cones here.
Top with more blueberries and walnuts or your choice of any other yummy toppings. Here are a few suggestions:

- ½ tsp vanilla extract
- 10 oz. blueberries (pureed (reserve a small handful for the top))
- ½ cup walnuts (chopped)
- ¼ cup walnut (halves )

- With a mixer, beat heavy whipping cream until thick
- Pour in sweetened condensed milk, vanilla extract, pureed blueberries and walnuts and fold together until well combined.

This looks easy and amazing...Question though...whipping the cream until thick means just until the soft peaks form but do not hold shape? Ive only used whipping cream for whipped topping or an Alfredo sauce.. I cannot wait to make this for my family.
