Little Debbie Cosmic Brownie Ice Cream
Ice Cream is one of my favorite desserts and I really love chocolate ice cream. And as far as Little Debbie Cakes go - my favorites are Christmas Tree Cakes, Star Crunches, Oatmeal Cream Pies - and Cosmic Brownies.
I mean what's not to love about those fudgy brownies with chocolate icing and rainbow candy-coated chocolate chips on top? They're so delicious and addictive. So of course combining the flavor and texture of the delicious Cosmic brownies with chocolate ice cream has to be a win!
And you don't even need an ice cream maker for this recipe - it's a no-churn brownie ice cream recipe that can be made in a humble loaf pan or bread pan.

How did I end up making Little Debbie Ice Cream? In November 2020, I posted a homemade recipe for Little Debbie Christmas Tree Cakes Ice Cream. It was SO good and I felt like it was pretty unique.
Then to my great surprise, in November 2021, there was a news story that there would be an official Little Debbie Christmas Tree Cake Ice Cream debut.
If you didn't know, I am a HUGE Christmas Tree Cakes lover, so I was SO excited to try it. Sadly, I was never able to find it in any of our local grocery store or local Walmart during the Christmas season (thanks, rural Mississippi 😉). I walked down the freezer aisle every time I entered a store during the holiday season, but I always left disappointed.
Copycat Little Debbie Cosmic Brownies Ice Cream Recipe
Fast forward to early 2022 when Little Debbie announced they would continue partnering with Hudsonville Ice Cream in Michigan to release a whole line of Little Debbie Snack Cakes Ice Cream! So if they were going to continue making different flavors - I figured I'd keep making the copycat recipes!
The Little Debbie Ice Cream line has so many flavors now! The Little Debbie ice cream flavors include Zebra Cakes Ice Cream, Nutty Bars Ice Cream, Swiss Rolls Ice Cream, Cosmic Brownies Ice Cream, Oatmeal Creme Pies Ice Cream, Honey Bun Ice Cream, Star Crunch Ice Cream, and Strawberry Shortcake Rolls Ice Cream.
Since then, I've shared my version of Little Debbie Strawberry Shortcake Rolls Ice Cream and today I'm sharing Little Debbie Cosmic Brownies Ice Cream. I have a couple of more flavors up my sleeve that I hope to share this summer.
Ingredients
These ingredients are pretty basic and easy to find in any grocery store. Except for maybe the rainbow chips but they're totally optional!
- Heavy Whipping Cream
- Sweetened Condensed Milk
- Vanilla Extract
- Dry Brownie Mix (or instant chocolate pudding mix or cocoa powder)
- Chocolate Syrup
- Cosmic Brownies (diced into small cubes)
- Mini Rainbow Chips (optional) - I purchased Wilton Rainbow Crunch Chips but I also found these Rainbow Candy Chips on Amazon and some Rainbow Chips at Kroger.
How to Make Little Debbie Cosmic Brownies Ice Cream
- Start by beating your heavy cream on high for about 5 minutes until stiff peaks form.
- Add in your condensed milk, vanilla, chocolate syrup, and brownie mix.
- Mix until well combined.
- Add in ¾ of your cut-up Little Debbie brownies, and mix in.
- Line your bread pan with parchment paper and fill with your ice cream batter.
- Top with your remaining brownie pieces.
- Freeze overnight.
- Serve and top with half a brownie and enjoy!
Pro Tips
Use a silicone loaf pan. If you want to skip the parchment paper, make the ice cream in a silicone loaf pan. This makes removing it from the pan very easy.
Be Patient. You can't rush the freezing time. At a minimum, the ice cream needs to freeze for 6 hours, but preferably overnight (or at least 8 hours) for the best texture.
Serving Suggestions
Serve in a bowl with some extra brownie pieces or extra rainbow chips. You could also top it with some fresh whipped cream.
Or serve in a sugar cone or waffle cone - yum!
Storage Directions
Any leftovers should be covered tightly with a couple of layers of plastic wrap or stored in a freezer-safe container to prevent freezer burn or ice crystals.
