I don't often make homemade popsicles but these Piña Colada Popsicles are worth it! With fresh or frozen pineapple, pineapple juice, cream of coconut, and a little rum, you have a pina colada popsicle recipe that you'll use over and over again.
These pineapple and coconut cream popsicles are the perfect treat for warm weather, a pool party, or after-dinner dessert. Just like a traditional popsicle but with the flavor of fresh ripe pineapples, sweet cream of coconut and a splash of rum.

Tools Needed to Make Pineapple Popsicles
- Measuring Cups and Spoons
- Blender - I much prefer my Blendtec but any blender will work.
- Popsicle Sticks (or Wooden Craft Sticks) - you can find these at a dollar store, craft stores, or big box stores.
- Silicone Popsicle Molds - you can get popsicle molds of different sizes but these are my favorite popsicle molds
Ingredients
There are only four simple ingredients for this delicious summer treat and all of them can be found at your local grocery stores. And if you're not making alcoholic popsicles, you'll only need three ingredients! By the way, you still have all the flavors of a tropical island when you skip the rum.
Pineapple Juice. Any brand of pineapple juice will work.
Cream of Coconut. This is not the same thing as coconut cream. Cream of coconut is a sweetened version of coconut cream and is more fitting for a frozen dessert like these Pina Colada Ice Pops because of the added sugar.
Pineapple. I actually prefer buying frozen pineapple chunks for this recipe (you get a jump start on the freezing process), but you can certainly use fresh pineapple and cut the fresh fruit into chunks.
Rum (optional). For alcoholic popsicles, of course, you'll use rum as you would in a pina colada recipe. If you don't love the flavor of alcohol, you can use just a little bit to give it that extra punch. I always have cheap white rum on hand for making vanilla extract, but you could use dark rum or any variety you prefer. If you want to make these kid-friendly for sunny days, skip the rum altogether and it's still a delicious homemade popsicle recipe.
How to Make Homemade Pina Colada Popsicles

- Add pineapple, pineapple juice, rum, and cream of coconut to your blender.
- Blend until smooth.
- If needed, add a splash of pineapple juice and blend, until the mixture is pourable.
- Fill the popsicle mold, and add popsicle sticks.
- Freeze for 8 hours, or overnight, until the popsicles are frozen.
- If the popsicles don't easily slide out of the silicone mold, run them under warm water for just a second to release them.
