I guess I'm craving citrus lately... first the Candied Lemon Slices and now the Lime Popsicles.
Usually, popsicles are a "kid" thing at my house. But these popsicles are for everybody! And since its' already getting warm around here (yes... it was 80°F here in Mississippi last week... in FEBRUARY), I'm already thinking about spring and summer treats.
So... if you want that summery lime flavor but not something as heavy as Key Lime Cheesecake (sooo delicious) or Key Lime Pie (another fave). then these Lime Popsicles are for you!
And they're so stinkin' easy to make!

That's it - so simple. Of course, you'll also need a popsicle mold. I love that set because it also comes with the sticks and a funnel and a brush for cleaning 😊
How to Make Lime Popsicles
First up you're going to make a simple syrup. In a small pan, bring the water to a simmer and whisk in the sugar until completely dissolved.
Remove it from the heat and allow it to cool completely.
Next, stir in the fresh lime juice. To make the lime ice pops prettier, add some lime zest to the mixture!
Carefully pour the mixture into your popsicle mold. If you have a set like this one, it comes with a very handy funnel that makes it so much easier!
Then enjoy the pretty, delicious Lime Popsicles on a hot summer day!

Instructions
- In a small pan, bring water to a simmer and whisk in the sugar until completely dissolved.

- Stir in fresh lime juice until fully incorporated. (optional: stir in lime zest)
- Carefully pour the mixture into the popsicle mold.
- Add the lid and popsicle sticks.
- Freeze for 5 hours or overnight.
- Enjoy!

If desired, you can add lime zest to the mixture or garnish the popsicles with the zest before serving.
