Mint Chocolate Chip Cookies
I’ll admit, I have a lot of favorites when it comes to sweets, but Andes Mints are one of my favorite favorites. 😉 The problem is… if I buy a bag of Andes Mints, I can easily sit and eat the whole bag without even realizing it. Especially if I’m working or watching TV… they’re gone before I know it.
It’s embarrassing.
Anyway… today I’m combining two of my favorite things. Andes Mints and Chocolate Chip Cookies.

Ingredients

- Granulated sugar – Plain White Sugar
- Brown sugar – I always use light brown sugar

- All-Purpose Flour
- Andes Mints Crèmede Menthe baking chips
- Semi-sweet chocolate chips
How to Make Mint Chocolate Chip Cookies
- Preheat the oven to 350 degrees.
- Combine the softened butter, egg, egg yolk, vanilla extract, and sugars.


- Fold the flour and baking soda into the butter mixture.
- Add the chocolate chips and Andes baking bits to the flour mixture.
- Chill the dough in the fridge for 15 to 20 minutes.


- Use a 2-inch cookie scoop to form dough balls and place them 2 to 3 inches apart on a cookie sheet. If you don’t have a cookie scoop, you’ll want to have about two tablespoons of dough for the cookie dough balls.
- Bake cookies for 10 to 12 minutes.

Either works perfectly! Use the bowl of a stand mixer for hands-free mixing, or a handheld mixer (also called an electric mixer) with a large bowl. Start on low speed when adding dry ingredients, then increase to medium speed for creaming butter and sugar.
Simply chop up regular Andes mints candies into small Andes mint pieces or use mint chocolate chips. About 28 mints (7 oz) equals approximately 1 cup of chopped mint chips.
