This week I got a hankering for Chocolate Chip Cookie Dough Cheesecake. Does anybody else say, "got a hankering"? No? Oh well.
A few weeks ago, I promised my sister-in-law some Chocolate Chip Cookie Dough Filled Cupcakes... and I failed to deliver. I don't think she was mad at me or anything, but I felt really bad about it.
It just seemed like every time I'd get ready to do them - something came up that distracted me. And those cupcakes... they're not something you can throw together at the last minute - they're a commitment! {But sooooo worth it!!!}
I've had this recipe for years and years, but it's been a long time since I had made one. I can't even remember when.
And I thought maybe, just maybe, I could make amends with my SIL by offering her some Chocolate Chip Cookie Dough Cheesecake since I flaked out and didn't make her cupcakes. Cheesecake makes everything better, right?
And instead of just offering her a slice, I decided to bake the cheesecake in these tiny (4") mini springform pans and give her her very own personal cheesecake. I bought them awhile back (for some hair-brained idea I can't remember), but had never used them.
I wish you could see how cute they are - I meant to take pics of a whole one, but before I knew it, they were all gone!
Anyway, I have to admit - I didn't personally end up baking these. My son Caleb did 95% of the work with just a tiny bit of oversight by me. Isn't he a cutie? And he's also an excellent cook and baker!!
The recipe below is for a 9" cheesecake, but it worked out really well for 4 of the mini cheesecakes. We probably could have made a 5th one if I'd had another pan... we had a little filling and cookie dough left over, but I didn't hear anybody complaining about licking that bowl (ahem - it might have been me!).

Chocolate Chip Cookie Dough Cheesecake
Ingredients
- 1 (13 oz.) bag of chocolate chip cookies, I prefer Chips Ahoy!, crushed
- ¼ cup sugar
- â…“ cup butter, melted
FILLING:
- 4 (8 oz.) packages of cream cheese, softened
- 1 cup sugar
- 1 tsp. all purpose flour
- 8 oz. sour cream
- 1 teaspoon vanilla extract
- 4 eggs, lightly beaten
COOKIE DOUGH:
- ¼ cup butter, softened
- ¼ cup sugar
- ¼ cup packed brown sugar
- 1 tablespoon water
- 1 teaspoon vanilla extract
- ½ cup all-purpose flour
- 1-½ cups miniature semisweet chocolate chips, divided
Instructions
- In a small bowl, mix together the crushed cookies, sugar and melted butter. Press onto the bottom and 1" up the sides of a 9" springform pan. Use the bottom of a glass to get into the corners - works great! Set aside.
- In a mixing bowl, mix together the cream cheese, flour and sugar until smooth. Add the sour cream and vanilla. Add eggs and mix just until combined. Be careful not to over-mix!! If you get too much air into the cheesecake batter, it might cause your cheesecake to crack during baking!
- Pour into prepared crust and set aside.
- In a small mixing bowl, cream together the butter and brown sugars, mixing until it's light and fluffy. Add the water and vanilla; gradually add flour. Gently fold in 1 cup of mini chocolate chips.
- Drop dough by teaspoonfuls into the filling, gently pushing dough below the surface with the handle of a spoon or a butter knife! The cookie dough should be completely covered by filling... if you notice that mine had the cookie dough on top - it's because we forgot to do this step 😉
- Put the pan on a cookie sheet and bake at 350° for 45-50 minutes or until the center is almost set.
- Allow the cake to cool in the pan for 10 minutes, then gently run a knife around the edges to loosen the cake. Cool at least another hour, then refrigerate for at least 4 hours (overnight would be better!).
- Remove the edges of the pan and garnish with mini chocolate chips, if desired. We didn't do this since our dough was on top!

Cookie Dough Cheesecake? That's my favorite one to get from Cheesecake Factory! I've never tried to make a cheesecake but I'd definitely have to try this out if I did!

Oh my, I would totally be willing to do a little extra work to make these. Cheesecake is one of my favorite things and adding cookie dough probably takes this over the top.
