Broccoli Cornbread
This Broccoli Cornbread recipe (sometimes called a Broccoli Cornbread Casserole) is one of the first recipes I shared on my first blog (not Rose Bakes) way back in 2010. It's a true family recipe that I've been making since I got married almost 30 years ago.
But it goes back further than that too. My Mama made it when I was a child. I think this recipe for broccoli cornbread came out of an old church cookbook.
Maybe they have it in other parts of the country, but in my heart and mind, this is true Southern comfort food as with most cornbread recipes.
Recently, I was told that mixing cornbread with broccoli and cheese sounded very strange, but seriously, if you enjoy these foods on your own (or maybe even if you don't), please try this Jiffy Broccoli Cornbread!

Broccoli Cheese Cornbread
We have it year-round with regular meals and we also make it for potlucks at church and holiday meals for big family gatherings! Usually I have to double it if I'm making it for anywhere except home, but for a regular meal for us, one pan is a good amount.
On the topic of Jiffy Mix, my family is pretty committed to real (not sweet) classic cornbread for almost any occasion. Why? Because my Mama makes the best cornbread!
But we never minded Jiffy Corn Muffin mix when it was time for this broccoli bread recipe! With the 4 eggs, this bread loses some of the texture of traditional cornbread (I can't describe the texture) but it's just so delicious and cheesy!
The cool thing is, my kids actually like broccoli (as long as it has cheese piled on top), but if your kids, or your husband, or whoever doesn't like broccoli, or if you want a new twist on broccoli, you might give this broccoli cheddar cornbread recipe a try! We never have any leftover cornbread!

Ingredients
You only need a handful of simple ingredients for this Broccoli Cheese Cornbread recipe.
Jiffy Corn Muffin Mix - you have to use Jiffy for this recipe. It's not the same without sweet cornbread.
Broccoli - we use frozen broccoli in this recipe, but you could use fresh broccoli instead. You'd just want to steam it first so it's not raw going into the cornbread mix. Cut it up into small florets - I don't usually keep in stems (but I suppose you could).
Medium Onion - yellow onions or sweet onions are what I keep on hand
Cheddar Cheese - mild, medium or sharp cheddar cheese would work in this recipe. I usually use mild or medium, but it's just a personal preference.
Eggs - large eggs, at room temperature
Butter - I use salted butter, but unsalted butter would work just as well.

How to Make Broccoli Cornbread
You can mix up this easy broccoli cornbread in under 10 minutes then it takes 30-40 minutes to bake. The cooking time may vary if you use a different size or shape dish.
- Preheat oven to 400°F. Put half a stick of butter in a 10-inch cast iron skillet or 9x9 glass baking dish.
- Place in the oven to get warm and melt butter.
- Mix all remaining ingredients (dry ingredients, chopped broccoli, and eggs) in a large bowl.
- Melt the other half of the stick of butter and stir into the cornbread batter.
- Pour the cornbread mixture into the warmed, prepared baking dish right on top of the melted butter.
- Bake for 30-40 minutes or until golden brown on top. It will be easier to remove from the pan once it cools slightly. Run a spatula under it to loosen it.
I mention above that you cake bake this in a 9x9 square baking dish OR a 10-inch cast iron skillet. For some reason, everything tastes better when baked in a well-seasoned iron skillet - so do that if you can... but if not, the glass dish works great!
Pro Tips
Be Careful. Pour batter into the hot pan carefully so the melted butter doesn't splatter and burn you!
Double up! Use two boxes Jiffy Cornbread Mix and double all the other ingredients, then bake in a 9x13 casserole dish if you need more servings. It may need to bake a little longer but it's such an easy cornbread recipe that is a great side dish for a large family gathering or potluck.
Servings Suggestions
Broccoli Cornbread pairs with pretty much any main dish. And the best way to serve this (or any cornbread) is slathered in butter! You could serve it with grilled chicken, fried chicken, pork chops, meatloaf, or any other meat you put on the dinner table.
Storage Directions
Store any leftover broccoli bread with jiffy mix in an airtight container or wrap tightly with plastic wrap or aluminum foil. Reheat in the microwave.

- 2 cups shredded cheddar cheese
- ½ cup milk
- 4 eggs
- 1 stick butter (8 tablespoons) - halved

- Preheat oven to 400°F. Put half a stick of butter (4 tablespoons) in a 10-inch cast iron skillet.
- Place in the oven to get warm and melt the butter. Melt the other half of the stick of butter and mix with all remaining ingredients.
- Pour the batter into the warmed dish.
- Bake for 30-40 minutes or until browned on top. It will be easier to remove from the pan once it cools slightly. Run a spatula under it to loosen it.
