We have a corn dish for every holiday meal, without exception. Sometimes it’s the Jiffy Corn Casserole (sometimes called corn pudding), sometimes it’s a big bowl of corn dip as an appetizer before the big holiday meal, and sometimes it’s this Creamy Corn Casserole I’m sharing today.
We have a big extended family, so sometimes we have all of the above. But this comforting side dish might be the best corn casserole I’ve ever had. I mean corn with cream cheese and bacon? What could be better?!

This Cream Cheese Corn Casserole is a family favorite because it has corn (of course) but it also has bacon and cheddar cheese. Combine those flavors with the Ranch Seasoning mix, and this Cream Cheese Corn Casserole is irresistible.
My favorite part about this Easy Corn Casserole recipe is that you can make it ahead of time and then bake it at your convenience, or you can prep it and transfer it to a slow cooker dish to free up some oven space if you’re making it for busy holiday dinners.

Ingredients

Butter
Frozen Corn – you could also use canned corn or fresh corn
Ranch Seasoning Mix
Cream Cheese – I prefer full-fat over low-fat cream cheese
Bacon Bits or Fresh Cooked, Crumbled Bacon
Shredded Cheddar or Monterey Jack Cheese – we prefer mild cheddar but you could also use sharp cheddar cheese.

How to Make Cream Cheese Corn Casserole
This Cheesy Corn Casserole recipe is a great addition to any meal and it’s so easy to put together!
- Preheat the oven to 350 degrees.
- Heat a large skillet over medium heat, then add the butter to the pan.
- When the butter is melted, add the corn and saute until the kernels are softened.
- Add the ranch seasoning and cream cheese to the pan and stir to mix. Continue stirring until the cream cheese is melted.



- Remove the pan from heat and stir in one cup of shredded cheese.
- Transfer the mixture to a baking dish and top with remaining cheese.
- Bake in the preheated oven for 20 to 30 minutes, until the sauce is bubbly and the cheese on top is melted.



Crock Pot Cheesy Corn Recipe
Follow the recipe above, but in step 5, skip adding the remaining cheese. Instead, transfer the corn and cream cheese mixture to your slow cooker and cook on low for 4 hours. After 4 hours, sprinkle the remaining cheese on top and stir until melted. Serve right away.
