Easy S’mores Cookies Recipe

This delicious, made-from-scratch S’mores Cookies recipe with graham crackers in the dough and is loaded with chocolate chunks and mini marshmallows then topped with pieces of Hershey chocolate bars. These chewy cookies are the ultimate treat for anytime you’re craving S’mores but don’t want to build a fire! These are perfect for after-school, a bake sale, a holiday cookie swap or any other occasion.

S’mores Cookies

As you might have guessed based on my S’mores Cupcakes, Frozen S’mores Bars, S’mores Charcuterie Board, and S’mores Rice Krispie Treats… we love some s’mores at our house. I’ve even made Baked S’mores with Peeps as an Easter treat!

So this recipe for Homemade S’mores Cookies was long overdue. The cookie dough is similar to chocolate chip cookie dough because it’s brown sugar based and has semi-sweet chocolate chunks

But these delicious cookies also have graham cracker crumbs, gooey marshmallows and actual Hershey bar pieces melted on top of each cookie! They are yum, yum, and more YUM!

Grab a tall glass of milk and be prepared for sticky fingers with these chewy S’mores Cookies!

How to Make S’mores Cookies

This S’mores cookie recipe is a from-scratch recipe, but that doesn’t mean it’s not an easy recipe! And the combination of marshmallows, graham cracker flavor, and soft chcolate chip cookies with a Hershey bar on top is irrestible.

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper. Set aside.
  3. Add the butter, eggs, white sugar, brown sugar, and vanilla extract to a large bowl and beat with an electric mixer until very well combined.

  1. Add the flour, graham cracker crumbs, baking soda, and baking powder to a separate bowl and whisk to combine.

  1. Add the dry ingredients (flour mixture) to the bowl with the wet ingredients and mix with the electric mixer until well combined. Scrape down the sides of the mixing bowl with a rubber spatula and mix once more to ensure all ingredients are fully incorporated.
  2. Add the chocolate chunks and mini marshmallows to the mixing bowl and mix them into the dough with a rubber spatula until fully incorporated.

  1. Scoop out scant ¼ cup portions of the graham cracker cookie dough, form them into cookie dough balls, and place them on the prepared baking sheet, evenly spaced.
  2. Break each Hershey’s bar into small pieces and place two on each dough ball, pressing down the top of the cookie slightly. Space them out on the parchment lined baking sheet.

  1. Bake the cookies in the preheated oven for 12 minutes, or until they are golden brown.
  2. Allow the cookies to rest on the cookie sheet for about 5 minutes before transferring them to a wire cooling rack to cool completely.

Storage Directions

Room Temperature. Store any leftover cookies in an airtight container for up to 3-4 days.

Freezer. If you want to make these s’more cookies ahead of time to freeze, here’s my recommendation: roll out your dough but do not add the chocolate pieces on top. Place them on a baking sheet or large plate and freeze until firm. Once solid, transfer the dough balls to a freezer bag and store them in the freezer for up to 3 months. Thaw the dough balls on a cookie sheet overnight before baking. Add the pieces of chocolate just before placing in the oven.

  • 1/2 cup granulated white sugar
  • 3/4 cup light brown sugar, packed
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 cups graham cracker crumbs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chunks
  • 1 cup mini marshmallows
  • Hershey bars for topping
