There’s something about warm spices cooking on the stove that makes a whole house smell like Christmas time. And there’s nothing I love better than Christmas time and a sweet-smelling house!

This is a favorite recipe because it’s delicious, but also because it’s my Daddy’s recipe and he makes it every fall and winter. The whole family loves these holiday pecans; I specifically love this recipe because it’s fast, cheap, and easy! 

Another reason I love this spiced pecan recipe is that it makes such nice edible gifts. A pretty mason jar, a ribbon, a little tag, and you’ve got a sweet gift that people are genuinely happy to receive. Nobody has ever handed these back!

Why You’ll Love This Candied Pecans Recipe

It’s a simple recipe with no baking at all. Everything happens in one saucepan on the stovetop, so there’s no waiting on an oven to preheat and no worrying about baking time. The good news is that the hardest part is the cooling, and that part happens without you.

It uses simple ingredients from any grocery store. Nothing fancy or hard to find to make candied pecans. You’re working with pantry staples, and the pecan halves are the only thing you might need to make a special trip for.

It’s a great snack and a great gift. These Christmas pecans are wonderful on a charcuterie board or tossed on a green salad, and they’re just as good scooped straight out of the jar. When you need food gifts (or teacher gifts!) in a hurry, a double batch takes almost no extra time.

How to Make Spiced Pecans

This whole process for how to make Cinnamon Sugar Pecans moves quickly once the sugar mixture comes to a boil, so go ahead and have your prepared baking sheet ready before you start!

  1. Line a baking sheet with parchment paper and set it aside.
  2. Combine sugar, water, cinnamon, and vanilla extract in a medium saucepan.
  3. Cook over medium heat, stirring, until the ingredients come together and the mixture comes to a boil. Try not to rush this over high heat… a scorched sugar mixture is not fixable.

  1. Remove the saucepan from the heat and add the pecans.
  2. Stir for several minutes, lifting and turning the pecans through the syrup until they’re coated. As the mixture cools, the cinnamon sugar coating will start to cling to the pecans.
  3. Keep stirring and tossing until all of the pecans are coated.
  4. Spread the pecans on the prepared baking sheet in a single layer, separating them as much as you can so they don’t stick together in clumps.

  1. Let the pecans cool and dry completely before serving or storing, at least 20 minutes. Enjoy!

Pro Tips

  • Use medium heat, not high heat. Sugar goes from perfect to burned quickly.
  • Get your sheet pan lined and waiting before you start. You need to spread them in an even layer as quickly as possible.
  • Stir a little longer than you think you need to. That extra minute or two of tossing is what turns loose syrup into a sugar coating that actually sticks.
  • Separate the pecans while they’re still warm. They will not come apart later without breaking that pretty shell.
  • Making a big batch? Cook it in two pans rather than one crowded one. The last batch in an overloaded pan never coats as well.
  • Let them dry completely at room temperature before you put a lid on anything. Warm nuts create steam, and steam makes them sticky.

Variations

  • Spicy pecans recipe: Add a pinch of cayenne pepper or a little chili powder to the spice mixture for a sweet-heat combination that’s so good on a cheese board.
  • Sweet and salty: Sprinkle the warm pecans with a little kosher salt before they set.
  • Maple: Swap out a teaspoon of the water for maple syrup for a warm, cozy flavor.
  • Extra warm spices: Stir a little ground ginger, nutmeg, or pumpkin pie spice into the sugar in a small bowl before it goes in the pan.

  • Sprinkled on top of sweet potatoes or stirred into sweet potato casserole

Storage Instructions

Let the pecans cool completely, then store them in an airtight container at room temperature for up to 2 weeks. A mason jar with a tight lid is my favorite for this, and it doubles as gift packaging.

Do not refrigerate them, because the moisture will soften that candy shell. For longer storage, freeze them in a freezer bag for up to 3 months and let them come back to room temperature before serving.

FAQ

Why didn’t my sugar coating harden? The syrup most likely didn’t reach a high enough temperature before the pecans went in. Let it come to a full boil next time, and keep stirring as it cools so the sugar has a chance to set up on the nuts.

Do I need egg whites or corn syrup for this? Nope! Some candied pecan recipes use one or the other, but this one gets its crunch from the cooked sugar mixture alone.

Can I use roasted or salted pecans? You can, though raw nuts give the best results. Salted pecans will taste sweet and salty, which some people love.

Can I make a double batch? Absolutely. Cook it in two separate pans instead of doubling everything into one, and have two lined sheet pans ready to go.

Are these good for gifts? They make great gifts! Package them in gift bags or jars once they’re completely cool and dry, and they’ll stay fresh for a couple of weeks.

Can kids help make these? Older kids can definitely help stir and spread the pecans, but the syrup is very hot, so that part is best left to an adult.
