How to Make Snickerdoodle Bread
This is one of those recipes where layering matters more than technique, so read through the steps once before you start.
- Preheat your oven to 325°F and grease a 9×5 inch loaf pan with cooking spray. (You can line it with parchment paper instead, which makes lifting the loaf out even easier.)
- In a small bowl, stir together the brown sugar, white sugar, and cinnamon for the topping. Set it aside.


- In a separate bowl, mix the flour, baking powder, and salt. Set that aside too.
- In a large mixing bowl, cream butter and granulated sugar together until it’s light and fluffy. Scrape down the sides of the bowl once or twice to mix everything evenly.

- Sprinkle the last of the cinnamon topping evenly over the top of the bread.
- Bake in the preheated oven for 65 minutes, until a toothpick or a long skewer inserted into the center of the loaf comes out clean.



- from the oven and let it rest in the pan for 10 minutes.
- Loosen the edges with a butter knife, then lift the loaf out onto a wire rack to finish cooling. Normally you’d just flip the pan over, but that will crumble your beautiful snickerdoodle topping, so I used a couple of spatulas like tongs to lift it straight up and out.

Pro Tips
- Let your butter, eggs, and sour cream sit out for 30 minutes before you start. Room-temperature ingredients blend together much more smoothly and give you a better crumb.
- Spoon and level your flour instead of scooping the cup straight into the bag. Too much flour is the number one reason quick breads bake up dry.
- Check the loaf at the 50-minute mark. Ovens vary, and this bread has a long bake time at a low temperature.
- Should the top start browning too fast, lay a piece of aluminum foil loosely over the pan for the last 15 minutes or so.
- Give it the full 10 minutes of rest in the pan before you move it. Warm quick breads are fragile, and that little rest gives the loaf time to set up.
