Summer is here and we all know what that means? Blackberries and peaches - the best part of summer! And blueberries and strawberries too, but that's not what we are here to talk about today!
But if you do love blueberries and have trees full of them, like we have for a couple of weeks now, check out this recipe and this one and this one. And if you love strawberries, don't skip this recipe and this one.
I have been craving fresh peaches for SO long now and the stores have just recently started stocking them! Peaches are a favorite fruit of mine so when I walked in and saw them I was like a kid in a candy store. I knew I wanted to make a new exciting dessert to share with you guys! This Peach and Blackberry Cobbler recipe is fantastic.
Look how beautiful those colors are! Peaches and sweet blackberries with that beautiful golden crust... *cue drooling* This is just about as good as it gets, a perfect dessert!
Peach Blackberry Cobbler
This recipe is a little different than your typical cobbler. The batter is a bit thinner than you are used to seeing but it truly is an easy cobbler recipe. I wanted to make it more of a cake texture instead of the typical biscuit topping.
I also put the batter on the bottom and the fruit on top. This allows the batter to rise to the top of the fruit mixture. I've actually been doing this for my whole life but as I've read a lot of other cobbler recipes, this is not always the case.
So if you've never made a cobbler like this, please give it a try!
In all seriousness, this blackberry and peach cobbler did not last long in my house. The kiddos pretty much gobble down whatever I make almost immediately, but they went crazy over this! My husband, who isn't a huge sweets fan even said he loved it!! Win!
Tools Needed for Peach and Blackberry Cobbler
Ingredients
Stop by your local grocery store or farmer's market to get fresh fruit. Everything else is probably already in your pantry!
For the fruit filling
- Fresh Sweet Peaches (medium) - 6 fresh peaches or around 4 cups of peach slices if using frozen
- Fresh Blackberries - 2 pints or around 4 cups of blackberries
- Granulated Sugar
For the batter
- All-purpose flour
- Light brown sugar
- Granulated sugar
- Baking powder
- Salt
- Butter
- Milk
- Vanilla Extract
How to Make Peach Blackberry Cobbler
This Blackberry Peach Cobbler recipe is super simple and it all starts with fresh fruit. You can use frozen but I cannot promise that it will taste as amazing!
- Preheat your oven to 350°F
- Wash and dry your fruit. Peel and slice peaches and place in a large bowl with the blackberries. Add ⅓ cup sugar and toss to coat the fruit. Let it sit for at least 30 minutes. This pulls out all the fruit juices.
- In a second bowl, combine all dry ingredients for the batter and give a good whisk to combine. Add the milk, melted butter and vanilla; mix until well combined.
- Spray a 9x13 baking dish with nonstick spray, and pour batter into the bottom of the pan and level. Pour the cobbler topping on top of the batter but do not mix together. You can also spoon mixture over the top if you like - this is the easiest way if you ask me.
- Bake in a preheated oven for 25-30 minutes or until golden brown around the edges of the pan and a toothpick comes out clean.
- Serve warm with a scoop of ice cream or whipped cream and enjoy!!
Pro Tips
- Squeeze some fresh lemon juice over the sliced peaches to prevent them from browning if you want. This is optional but a nice touch to keep that beautiful peach color.
- Don't have peaches? You can use any other fruit in their place: blueberries, strawberries, cherries, etc.
Serving Tips
- Serve with vanilla ice cream or fresh whipped cream on top for the ultimate summer dessert!
- Serve warm or at room temperature or even cold (although that's not my favorite).
Storage Suggestions
Keep any leftover cobbler in an airtight container in the refrigerator for up to 5 days. It will get soggier as the days go on, but I love to reheat it in the microwave and enjoy really juicy cobbler!
