Sugar Cookie Latte (Starbucks Copycat Recipe)

This Sugar Cookie Latte (a Starbucks copycat recipe) is a festive seasonal drink made with smooth Blonde Espresso, your own sugar cookie syrup, and creamy almond milk. Topped with red and green sprinkles, it’s the perfect recipe for a sweet, buttery treat served over ice (or hot)!

Sugar Cookie Latte

The holiday season is here and now you can make this Starbucks Sugar Cookie Latte recipe anytime you want, right at home. 

I’m gonna be honest here – it was only in the past year or so that a Starbucks was built within driving distance of my home, and the closest one is still 20 miles away. Remember, I live in rural Mississippi.

And even after the Starbucks coffee shop was built there, I’m not a big coffee drinker so I’ve only had a Starbucks drink once. 

But when I heard about this sugar cookie Starbucks drink on Tiktok – a Sugar Cookie Latte – I knew I needed to try a new holiday drink

While I’m not a coffee drinker, I like coffee-flavored sweets like Tiramisu, coffee-flavored cake, a Mocha Latte at McDonalds, and Bluebell Coffee Ice Cream.

I also make a mean coffee milkshake at home (one day, I’ll share that recipe). Anywho… my point is that any drink that tastes like a Christmas sugar cookie with a hint of coffee has my attention! 

And I was sure I could come up with a copycat Sugar Cookie Latte recipe. I love to try new drinks and if I can make a homemade version, even better!

For this recipe, we’re even making our homemade sugar cookie-flavored syrup that can be used again and again. You can have a Sugar Cookie Almondmilk Latte every day this week if you want! 

Sidebar – why do they not have a space in “Almondmilk”… because that’s not a typo on my part – that’s the official name: Starbucks® Iced Sugar Cookie Almondmilk Latte.

The best part is you can even add the festive sprinkles on top, just like the Starbucks version of the Iced Sugar Cookie Latte. And if it’s not that time of year (the holidays), you can use rainbow sprinkles and drink it with sugar cookies!

While I’m not a frequent Starbucks customer, I don’t totally live under a rock so I do know that a certain time of the year, Starbucks offers new holiday drinks and a seasonal menu. 

I also know these festive drinks are always crazy popular. Isn’t that where all the Pumpkin Spice memes come from? Haha. 

Anyway, this Sugar Cookie Iced Latte is a holiday favorite drink, and homemade lattes are not that difficult to make, so let’s get started!

The ingredients for this Iced Sugar Cookie Almond Milk Latte are easily found at your local grocery store. Some of them were not already in my pantry (espresso powder and almond milk, to be specific), but I added them to my grocery delivery with no problem.

Sugar Cookie Syrup

This is a variation from basic simple syrup that has some extra flavors! And once you’ve made homemade sugar cookie syrup, you’ll wonder why it hasn’t always been in your life. You get the sugar cookie taste in your morning coffee drinks… yum!

Latte

  • Nescafe blonde espresso powder
  • Hot water
  • Sugar cookie syrup (that you make!)
  • Almond milk
  • Ice
  • Non Pareil sprinkles

Substitutions

Sugar Cookie Syrup – You can use premade syrup, but the flavor may be different from that of homemade syrup.

Nescafe Blonde Espresso Powder – you can use classic double shots of espresso.

Almond Milk – If you don’t love almond milk, you can use your milk of choice. I recommend another plant-based milk, such as oat milk, soy milk, or coconut milk. You can also use regular dairy milk if you prefer (anything from whole milk to skim milk) but this will take away from the nutty flavor.

Cold Foam – this will vary from the Starbucks latte, but if you want to skip the cold foam, you could use fresh whipped cream (or real whipped cream from a can) to top your Starbucks almond milk latte. You can also buy canned Cold Foam Creamer (without the sugar cookie flavor).

​With this recipe, you’ll make your own homemade Starbucks Sugar Cookie syrup, your own cold foam and your very own homemade latte. I don’t know about you, but all of this makes me feel very fancy. And after you take that first sip, you’ll feel the same way!

  1. Combine the brown sugar and water in a small pot over medium heat. Bring the mixture up to a simmer until all of the sugar dissolves. Stir in the cake batter extract, vanilla extract, almond extract, and salt
  2. Remove the syrup from the heat and allow it to cool. Once it has cooled, transfer the mixture into an airtight container.
  3. Add your heavy cream and sugar cookie syrup into a cup. Use a milk frother to whip the sweet cream into a light foam.
  4. In a medium cup, mix your espresso powder and hot water until all of the espresso powder has dissolved. Add in your sugar cookie syrup and milk, and fill the cup almost full with ice.
  5. Pour your sugar cookie cold foam over the top of the latte and sprinkle on some of the nonpareils for a festive touch and to perfect your Starbucks copycat drink.

If you want to make a hot version of this recipe, follow the same recipe but omit the ice and steam your milk or warm it in the microwave. Voila – you have a hot latte!

Storage Instructions

Sugar Cookie Latte should be stored in separate parts. 

The Sugar Cookie Syrup can be stored in an airtight container at room temperature for up to 2 weeks. 

The Latte part can be stored in a glass jar with a lid for 2 days in the fridge. 

The cold foam will need to be made fresh each time.

Serving Suggestions

What should I serve with my Sugar Cookie Latte?

I mean seriously – it’s kind of dessert all by itself but you could certainly lean into the theme and drink it with dessert. I’d recommend cookies, pie or pastries.

FAQ

Can this be made with classic espresso instead of the instant kind?

Yes, you can substitute a classic double shot of brewed espresso for this instant espresso powder.

What if I don’t have an electric milk frother?

If you don’t own a milk frother, you can place the heavy cream and sugar cookie syrup into a mason jar with a lid and shake it until it’s foamy. You can also use your hand mixer with the whisk attachment.

I know it will not be an exact Starbucks copycat recipe but if you want to skip the cold foam, another great option is to top your latte with fresh whipped cream.

Can I make a hot sugar cookie latte?


Yes, you can make this hot. Follow the same recipe, but just omit the ice and steam your milk or warm it in the microwave.

Is there a way to give this even more of a sugar cookie flavor?

If you’re missing the extra sweet buttery taste of a sugar cookie, you can add ½ teaspoon of butter extract to give it more sugar cookie flavor. This will change the flavor of the syrup, and it will not taste like exactly a Starbucks sugar cookie latte anymore.
