When the holiday season rolls around, I’m always looking for holiday appetizers that feel fancy, but are actually easy to make. These Cranberry Brie Bites check both boxes – they’re elegant enough to impress guests at holiday parties, yet simple enough that you won’t feel overwhelmed by the prep work. They are the perfect appetizer for holiday gatherings, Christmas parties, or anytime you want to serve something impressive and easy.

These cranberry brie bites have become one of my favorite easy appetizer recipes. They pack lots of flavor into a simple recipe with three main ingredients: sweet cranberry sauce, creamy brie, and buttery puff pastry. And while you could use plain pecans to add some crunch – if you have time to make and use Spiced Pecans, gosh it makes them so much better!!

I’ve always loved the combo of fruit and cheese, so this is one of my favorite appetizers to make. I could easily eat a dozen of them before I realize what happened!

Cranberry Brie Puff Pastry Bites sound fancy but are really made with simple ingredients found at most any local grocery store. Because it’s so simple, I include making fresh cranberry sauce for this recipe but you could certainly use canned sauce if you want a shortcut.

How to Make Cranberry Brie Bites

Make the Cranberry Sauce

  1. Combine fresh cranberries, granulated sugar, orange zest, and fresh orange juice in a small saucepan. 
  2. Bring it to a boil, then reduce the heat and simmer until the cranberries soften and begin to burst – about 8 to 12 minutes.

The key is to stop cooking before it becomes jam-like. You want it to be saucy, not thick. Once cooled, this tart cranberry sauce will keep refrigerated for several days, making it convenient for party prep.

If you’d rather skip the homemade cranberry sauce, you can absolutely use store-bought cranberry sauce in a pinch or use leftover cranberry sauce from another holiday meal, though making it from scratch really is worth the minimal effort.

Assemble the Baked Brie Bites

  1. Preheat your oven to 375°F.
  2. If you haven’t already, cut a wheel of brie into 24 small pieces. Place your cubed brie in the freezer for 10 to 15 minutes to firm it up. Cold brie keeps everything from melting together during assembly.
  3. Lightly grease a mini muffin tin with non-stick cooking spray. 
  4. Working with one thawed puff pastry sheet at a time (keep the other refrigerated), gently roll the sheet of puff pastry out on a work surface just enough to smooth out the creases. You’re not trying to expand it – just neaten it.
  5. Cut the puff pastry sheet into 12 equal-sized squares by making three cuts in one direction and four in the other. If you’re working with a sharp knife, this is straightforward; a pizza cutter works great too.

  1. Gently press one pastry square into each cup of your mini muffin pan. Prick the bottom once or twice with a fork to prevent puffing too much in the center.
  2. Place a small, cold piece of brie into each cup.

  1. Spoon approximately a teaspoon of cranberry sauce (or two) over the brie. Then top with a few chopped spiced pecans. You can use plain chopped pecans if you like.

Bake and Serve

  1. Place your baking sheet lined with foil or parchment paper beneath the mini muffin pan to catch any filling that might bubble over. Bake for 15 to 18 minutes, until the pastry is puffed and golden brown.
  2. Let the bites cool in the pans for 3 to 5 minutes – they’ll be quite delicate when hot – then use a fork to carefully transfer them to your serving platter. Top each with a small sprig of rosemary.

These Baked Brie Bites are wonderful served warm or at room temperature, so there’s flexibility in your timing. That said, they’re truly best enjoyed within a few hours of baking, when the pastry is still at its crispest.

Here are a few tips to make the best of this Cranberry Brie Bite recipe.

  • If you want to get ahead for holiday gatherings, you can prepare these the day before. After pressing the pastry into your mini muffin tin and adding the brie, cover tightly with plastic wrap and refrigerate for up to two days. Prepare the cranberry sauce separately and store it in an airtight container in the refrigerator. Then, shortly before your guests arrive, bake and garnish. This workflow takes much of the stress out of last-minute entertaining.
  • Some recipes suggest using crescent rolls or crescent roll dough sheet instead of pastry sheets, which will work in a pinch, though they won’t give you quite the same flaky, delicate texture that true puff pastry provides.
  • The beauty of this easy holiday appetizer recipe is its flexibility. If you want to dry a different cheese, goat cheese or camembert cheese are probably good substitutes. You could also try different fruit toppings – fig jam would be great instead of the tangy cranberry sauce. Some of my readers love adding a double cream brie for extra richness.

For the Cranberry Sauce

  • 6 ounces (~3/4 cup) fresh cranberries
  • 1/2 cup granulated sugar
  • 1/2 tablespoon orange zest
  • 2 tablespoons fresh orange juice

For the Puff Pastry Bites

  • 2 sheets puff pastry, thawed but kept cold
  • 8 ounces of Brie cheese, cut into 24 small pieces, kept cold

Garnishes (optional, but SO good!)

  • 1/4 cup chopped Spiced Pecans
  • Honey, for drizzling
  • 12 fresh rosemary sprigs

Instructions

  1. Add the cranberries, sugar, orange zest, and orange juice to a small saucepan.
  2. Bring the mixture to a boil, then reduce the heat and simmer for 8 to 12 minutes. Cook until the cranberries are soft and begin to burst, but remove the sauce from the heat before it becomes as thick as jam.
  3. Set the sauce aside to cool.
  4. Preheat the oven to 375°F. Place the cubed brie in the freezer for 10-15 minutes to firm it up.
  5. Lightly grease a mini muffin pan (or two) with a total of 24 wells.
  6. Place one cold puff pastry sheet on a lightly floured surface. Gently roll it just enough to smooth out the creases without making it much larger. Keep the second sheet in the fridge until you’re ready to use it.
  7. Cut the pastry into 12 equal squares. Cut it into three strips in one direction, then four strips in the other direction.
  8. Gently press one pastry square into each mini muffin cup. Prick the bottom of each pastry cup once or twice with a fork.
  9. Push one small (cold) piece of brie into each pastry cup.
  10. Spoon a little cranberry sauce over each bite (appx 2 tsp).
  11. Top with a few chopped spiced pecans. Place them muffin pan on a baking sheet lined with foil to catch any filling that overflows.
  12. Bake for approximately 15-18 minutes, or until the pastry is puffed and golden brown.
  13. Let the bites cool in the pans for 3-5 minutes, then use a fork to carefully transfer them to a serving platter. Garnish with a small piece of rosemary.
  14. Serve warm or at room temperature. Enjoy!

Notes

  • Keep the puff pastry cold. Cold pastry will puff up better in the oven. If it becomes warm or too soft while you’re working, place it back in the refrigerator for a few minutes.
  • Cut the brie into small pieces. Each piece should be slightly smaller than a ½-inch cube. If you add too much cheese, it may melt over the sides of the pastry cups.
  • You can substitute about 1 cup of store-bought cranberry sauce if you don’t want to make your own.
  • To prepare these ahead, press the pastry into the muffin pans and add the brie. Cover and refrigerate for up to two days. Prepare the cranberry sauce separately and keep it refrigerated. Bake and garnish the bites shortly before serving.
