Two weeks in a row, I’ve listed Tortilla Pizzas in my Meal Plan Monday, and last week I had promised the recipe, but kept forgetting to post it, so finally…here it is!
First let me say, there are a couple of reasons why we love this recipe!
#1 – it’s so easy the kids can make it themselves!
#2 – it’s ready in about 2 seconds (okay, 10 mins), but I’m just saying, it’s FAST!
#3 – it’s cheap – way cheaper than frozen pizzas and healthier too! Oh, and clean-up is a breeze!!
I almost forgot to take pics when we made it the other day, so my ingredients are already opened and messy here, but this is what you’ll need:
Cheese (we use mozzarella most of the time, but any shredded cheese will work), flour tortillas (we use anything from the small ones to the HUGE ones – doesn’t matter!), spaghetti sauce (or pizza sauce – we almost always have spaghetti sauce on hand, but not pizza sauce, so spaghetti sauce has become the “norm” for this recipe), and other toppings if you want (pepperoni is our favorite!)…
As I said before, these are so easy to make that my kids usually make their own lunch when we have them. Sarah was my “cook” the day I took these pics (with “help” from Christian).
First, turn your oven on broil. While its heating up, lay out the tortillas on a cookie sheet, use a spoon to spread out some sauce, then top with cheese and toppings. How easy is that??
Pop them in the oven under the broiler for about 3-5 minutes (depending on your oven), then enjoy!!
My youngest decided to fold his over and eat the rest of it…and boy was it yummy!!
