Easter Skillet Cookie Recipe
Of all the desserts I make, I've never had a cookie skillet. 😱
Which is a shame because cookies are a favorite dessert of mine.
But I've always wanted to make a skillet cookie and with all of the pretty pastel Easter candy out there, I figured I'd go all out and make it a festive and pretty Easter recipe.
Also, this is a terrific way to use up extra or leftover Easter candy! If there is such a think in your house 😉
The base of this easy treat is the same dough as a chocolate chip skillet cookie - except the usual semi-sweet or milk chocolate chips are replaced with Easter candy, white chocolate chips, and pastel sprinkles.
You could enjoy this for an Easter dessert or anytime in March or April as a spring dessert.

Tools Needed to Make the Skillet Cookie
- Stand Mixer with a paddle attachment (you could make an electric mixer (aka hand mixer) work if that's what you have - it may just take a little more of an arm workout.)
- 10-inch cast-iron skillet for one giant skillet cookie (or a 9-inch cast iron skillet or 12-inch cast iron skillet, if that's what you have). If you use the larger skillet, the cookie will be thinner and make cook a little faster so check it in the oven!
Ingredients
Crisco - some of my favorite cookie recipes include vegetable shortening, so please... use the Crisco. (need to know the difference between Crisco & Butter? Check here)
Sugar - just plain white sugar
Brown Sugar (packed) - be sure to pack it down in your measuring cup! I use light but you could also use dark brown sugar.
Eggs - I use large eggs at room temperature.
Baking Soda - don't skip this step: dissolve the baking soda in 2 teaspoons of hot water.
Vanilla Extract - these days I either use homemade vanilla or this amazing brand of pure vanilla extract.
All Purpose Flour
Salt
White Chocolate Chips - not every store carries them, but if you can find Funfetti Chips, they'd be SO pretty in this recipe!
Whopper's Robin Eggs (crushed) - you can use these or any other brand of malted milk eggs. It's easier to crush these using a meat tenderizer or placing them in a bag and using a rolling pin to crush them. Chopping them with a knife is difficult and tricky.
Easter M&M's
Easter Sprinkles - or any bright, happy confetti sprinkles!
Ingredient Substitutions
Mini Egg Cookie Recipe: you can substitute Cadbury Mini Eggs (creme eggs) for the Robin Eggs if you like - or use both! As far as that goes, you could really use any favorite Easter candy in these cookies!
Chocolate Chip Skillet Cookie: Since this dough is the same as the dough for a chocolate chip cookie skillet, you could use semi-sweet chocolate chips or dark chocolate chips in place of Funfetti chips or white chocolate chips (it just wouldn't be as Easter-y) 😉
How to Make a Skillet Cookie
- Preheat the oven to 375°F. Grease the inside of your cast iron skillet with butter or vegetable oil or spray with non-stick cooking spray.
- Start by beating together your Crisco, sugars, and baking soda in the bowl of your stand mixer. Mix on low speed until smooth. If using a hand mixer, use a large bowl.
- Add in eggs and vanilla. Mix again.
- In a separate medium bowl, whisk together the flour and salt.
- Add in remaining dry ingredients (the flour mixture) and mix into the egg mixture until dough forms.
- Dump in chocolate chips and stir/knead into dough.
- Press the soft dough into the bottom of a prepared skillet.
- Top with crushed Robin eggs, Easter M&M candies, and sprinkles.
- Bake at 375°F for 20-25 minutes, or until golden brown around the edges and gooey texture in the middle.
- Let it cool and set up for at least 20 minutes before slicing.
- Serve warm and enjoy!!
Pro Tips
Don't have a cast iron pan? Use any oven-safe skillet or even a cake pan! It works just as well!
Easiest Way to Crush the Candy Eggs: It's easier to crush the malted milk eggs into smaller pieces using a meat tenderizer or placing them in a bag and beating with a rolling pin. Chopping them with a knife is difficult and tricky.
Make Extra Cookies! If you only have a small skillet and you can't make a giant cookie, you can still make this recipe in the small skillet and use the extra dough to make some delicious (and pretty!) Easter Cookies! (see below). The only major thing you need to do is adjust the baking time.
Easter Cookies with Malted Milk Eggs:
To make the Easter cookies, follow these simple instructions:
- Scoop the cookie batter onto a parchment-lined cookie sheet with a large cookie scoop.
- Press down with the bottom of a glass, then top with Easter candies.
- Bake at 350° for 10-12 minutes, until slightly browned around the edges.
- Note: adjust the cooking time as needed for smaller or larger cookies. You want golden brown edges and a soft center.
- Cool & enjoy!
Serving suggestions
- Let it cool and set up for at least 10 minutes before slicing!
- Serve with coffee or milk. Even better... enjoy a cookie skillet with vanilla ice cream for the perfect dessert!
- This is perfect for any Easter or spring celebration, dessert at home, or an after-school snack!
Storage Suggestions
- Store for up to 3 days in an airtight container.
