Easy Cheese Fries

My youngest son Asher is obsessed with fries. Actually (and I think I’ve mentioned this before), he’s obsessed with a lot of yellow foods and has been for most of his life. So these fries… they’re for Asher.

This is one of those easy recipes that feels like a special treat, even on a busy weeknight, and it doesn’t require a lot of work. And who doesn’t love a big plate of crispy fries covered in melted cheese?

The best part is I don’t have to fry the fries… Asher prefers that method. For this recipe, the fries cook in the air fryer while you make the cheesy sauce on the stove, so everything is ready at the same time… and there’s no pot of hot oil to deal with!

Ingredients

You only need a handful of simple ingredients for these cheese fries.

ingredients for cheesy fries recipe
  • Frozen French Fries – This recipe was tested with thin, restaurant-style frozen French fries from a 26-ounce bag, but steak fries, curly fries, or potato wedges will work just fine too. Just don’t use a bag larger than 32 ounces, or you’ll need more cheesy sauce.
  • Butter
  • All-Purpose Flour
  • Paprika, Salt & Pepper – Add spices to taste. A little garlic powder is a yummy addition too!
  • Whole Milk – We tested both whole milk and almond milk, and both work well.
  • Cheddar Cheese – Any type of cheddar will work! Be sure to freshly shred it for the best results… pre-shredded cheese has an anti-caking coating that keeps it from melting as smoothly.
  • Green Onions – Thinly sliced, for garnish.

How to Make Cheese Fries

Here’s how to make cheesy fries in just a few simple steps.

  1. Preheat your air fryer to 400°F. Place the fries in the basket in 1-2 layers (you should still be able to see the bottom) and air fry for 12-15 minutes, or follow the package directions. You may need to fry these in batches.
  2. While the fries are cooking in the air fryer, melt the butter in your saucepan.
  3. Stir in the flour, paprika, salt, and pepper.
  4. Once the dry ingredients are well mixed with the butter, slowly pour in the milk while stirring constantly to keep the mixture thick.

  1. Stir in the shredded cheddar until it fully melts.
  2. Once the sauce and fries are done, place the fries on a large serving plate, pour the cheese sauce over them, and sprinkle with green onions (Asher and I don’t like the green onions, so skip them if you want 😉). Enjoy!

Pro Tips

  • Pour the milk in slowly, just a little at a time, and keep stirring the whole time. Adding it all at once can leave you with a thin, runny sauce instead of a thick, creamy one.
  • Making the fries in batches? Start the sauce when you put in the last batch of fries. The sauce only takes about 10 minutes, and you’ll want both done around the same time.
  • Try not to overcrowd the basket. The air fryer needs room for that high-temperature air to circulate, which is what gives you crispy fries.

Variations

  • Loaded Cheese Fries: Top with crumbled bacon, a dollop of sour cream, and extra green onions.
  • Chili Cheese Dog Fries: Add chili and sliced hot dog pieces for a hearty game day snack.
  • Cheesy Tots: Swap the fries for tater tots and air fry them according to the package directions.

Storage Instructions

These fries taste the best when freshly made! To save leftovers, let them cool completely, then store them in an airtight container in the fridge for 2-3 days. Reheat in the microwave until warm.

Cheese Fries FAQs

Can I bake the fries instead?

Absolutely! Whether you don’t have an air fryer or just prefer the oven, go right ahead and follow the directions on the back of the french fry bag.

Do the fries taste the same after saving and reheating?

No. These are best enjoyed freshly made. Reheating in the microwave will make them slightly soggy… they’re still good, but not even close to as good as when they’re fresh.
