Crispy Dry Rub Chicken Wings Recipe

Our family loves wings (especially when watching football games), but they’re not always an easy meal or app. This recipe is different.

This recipe uses simple ingredients and minimal effort, and that makes it one of our most favorite wings recipes.

These dry-rubbed wings come out of the oven with crispy skin and tender meat without any deep frying. The secret is a little baking powder in the spice mixture (I promise it works!), plus a wire rack that lets the hot air circulate around the entire wing.

You just mix the dry rub in a small bowl, toss the wings, and let the oven do the rest. It’s the best way I know to make crispy wings at home.

Why You’ll Love These Dry Rub Wings

They’re crispy without frying. Baking at high heat on a rack gives you crispy chicken wings with only a small amount oil, so there’s no pot of hot grease on the stove.

The seasoning blend is just right. The sweet and savory spices hit the perfect balance, with a little heat that grown-ups and kids can both enjoy.

They’re great for a crowd. It’s easy to make a double batch for game day, and they’re a huge hit at parties right alongside some Buffalo Chicken Sliders or Cheeseburger Dip!

Ingredients

You probably have most of these dry rub ingredients in your pantry already!

ingredients for dry rub wings
  • Chicken wings – flats and drumettes, or whole chicken wings with the wing tips removed
  • Regular paprika – smoked paprika works too for a deeper flavor
  • Onion powder
  • Garlic powder
  • Kosher salt
  • Black pepper
  • Italian seasoning – or any mix of dried oregano, thyme, and basil
  • Brown sugar – helps the wings caramelize
  • Chili powder – swap in cayenne pepper for more heat
  • Baking powder – use aluminum-free; this is the secret to crispy skin (homemade recipe here)
  • Olive oil – avocado oil, vegetable oil, or melted butter all work

How to Make Dry Rub Wings

The cooking process is simple, and most of the cook time is hands-off.

  1. Dry the wings. Pat the wings very dry with paper towels. Removing excess moisture is the most important step for crispy wings.
  2. Mix the rub. In a small bowl, stir together the paprika, onion powder, garlic powder, salt, pepper, Italian seasoning, brown sugar, chili powder, and baking powder. This really is the best homemade spice blend for wings!
  3. Season. Place the wings in a large bowl, sprinkle the delicious dry rub over them, and toss until every wing is evenly coated.

  1. Add the oil. Drizzle the olive oil over the seasoned wings and toss again so the spices stick.
  2. Set up the pan. Line a rimmed baking sheet with aluminum foil, set a wire rack on top, and give the rack a quick spray of cooking spray. Arrange the wings in a single layer with a little space between each one.

  1. Bake. Bake at 425°F for about 40 minutes, flipping halfway through. For crispy perfection, raise the oven to 450°F for the last 5 minutes.
  2. Check and rest. The wings are done when they’re golden brown and reach an internal temperature of 165 degrees F. Let them rest for 5 minutes for juicy wings.

Pro Tips

  • Don’t skip the rack. Wings baked flat on the pan sit in their juices and won’t get as crispy.
  • Let the seasoned wings rest for 30 minutes (or overnight in the fridge) for even more flavor.
  • Give the wings room on the pan, because overcrowding traps steam.
  • Use a meat thermometer for best results, since oven temperatures can vary.

Variations

  • Spicy: add cayenne pepper or chipotle powder to the already flavorful dry rub for extra kick.
  • Tangy: stir in a little mustard powder.
  • Smoky: use smoked paprika in place of regular paprika.
  • Air fryer: cook the wings in a single layer in the air fryer basket at 380°F for 20 to 24 minutes, flipping halfway.
  • Other cuts: chicken thighs work with this dry rub too, though they won’t be quite as crispy.

FAQ

Can I make dry rub wings ahead of time? Yes! Season the wings and keep them covered in the fridge overnight. The flavor gets even better.

Can I use frozen wings? Sure, just thaw them completely, then pat them very dry with paper towels.

Why aren’t my wings crispy? Too much moisture or a crowded pan is usually the culprit. Dry them well and give them space on the rack.

Do I need a liquid marinade? Nope! The dry rub does all the work, so you don’t need a liquid marinade, chicken stock, or hot sauce soak.
