These Pumpkin Pie Decorated Cookies are maybe some of the easiest decorated cookies I've ever made and gosh - they're just so darn cute! With only two icing colors, they come together quickly and you can make them as individual pie slices or present them as a "whole pie."

A couple of weeks ago my sis-in-law Ariel asked me if I could make some Thanksgiving Cookies for my nieces' Thanksgiving feast at her school.
Cookies are really not my area of expertise, but as long as they're simple, I enjoy making them. It helps that Ariel gave me free rein on what kind of cookies to make.

Given the choice, I browsed Pinterest and chose a few designs that I felt comfortable making, along with a couple of things Ariel mentioned. The cookies I was most excited about? Pumpkin Pie Cookies!! I had seen these floating around and I was smitten with them.
But I didn't want to make only Pumpkin Pie Cookies, so I looked at dozens of designs and I finally made a list of cookies I'd make and icing colors that I'd need:
- Feather Cookies : red, orange, and yellow
- Pilgrim Hat Cookies: black, tan, yellow
- Turkey Cookies: brown, black, red, orange, yellow
- Pumpkin Pie Cookies: orange, tan
- Acorn Cookies: brown and tan
For this post, I'm going to focus on the Pumpkin Pie Cookies, but if you're interested, here are the gel colors I used for this spread:
- Red (Americolor Tulip Red)
- Orange (Americolor Orange)
- Yellow (Americolor Lemon Yellow)
- Tan (Americolor Warm Brown)
- Brown (Americolor Chocolate Brown)
- Black (Americolor Super Black)

How to Make Decorated Pumpkin Pie Cookies
I didn't take step-by-step pictures of making these cookies, but they're truly easy to make. If you want more details of how I decorate, check out this post where I decorated some dinosaur cookies.
First up, I used this roll-out sugar cookie recipe (my favorite!) and this royal icing recipe. If the dinosaur cookies post is not enough info, I also go into a lot of detail in my ebook, How to Sell Paint-Your-Own Cookies.
So first, grab you a slice of pie cookie cutter. I purchased this multi-cutter on Etsy but these pie slices are a very basic shape so you could easily cut these without a cookie cutter.
How to cut out pie slice cookies without a cookie cutter.
- Roll out your cookie dough, then flip a bowl over upside-down and use the rim to cut out a large circle.
- Use a pizza wheel to cut the circle into 6-8 equal slices (depending on how big you want your cookies).
- Done! Easy-peasy!
After your cookies are baked and cooled, and the icing is made, you'll start by covering all but the "crust" edge with orange royal icing.
Allow this to dry for at least half an hour, then mix up some tan icing. I used warm brown to get a light brown "pie crust" color.
To pipe the ruffled edge, I used a Wilton Petal Tip #103. You can get an idea of how that's done over here on the Wilton website.
And voila... the cookies are done! Well, unless you want to add a little "dollop of whipped cream" with white royal icing. This is a really cute touch that you can see on the cookie examples on Etsy.
Instead, when I took the pictures of the 'whole pie', I used one of the turkey cookies in the middle.
