Easter Cookies Without Eggs
This Easter cookies recipe is an eggless chocolate chip cookie recipe, and it works without eggs because of a few key ingredient adjustments:
- Butter & Sugar Creaming – The combination of softened butter, brown sugar, and granulated sugar helps create structure and moisture, mimicking the binding effect of eggs.
- Cornstarch – Acts as a binding agent and helps keep the cookies soft and tender. It also prevents them from becoming too crumbly.
- Baking Powder & Baking Soda – These leavening agents provide lift and lightness, ensuring the cookies aren’t too dense.
- Flour & Fat Balance – The ratio of flour to butter maintains the right texture without needing eggs.
These ingredients work together to create a delicious, chewy cookie without the need for eggs!
How to Make Easter Cookies
This Easter cookie recipe requires no fancy decorating or meringue powder - just pantry staples and holiday M&Ms.
- Preheat your oven to 350℉ and line your cookie sheet with parchment paper or a silicone mat.
- Cream butter, brown sugar, white sugar, and vanilla together until light and fluffy.
- Then stir in the dry ingredients: flour, cornstarch, baking powder, and baking soda. Be sure to scrape to the bottom of the bowl to incorporate all the dry ingredients.
- Fold in the chocolate chips and M&M’s.
- Then, using your 2 tablespoon cookie scoop, scoop 6 balls of cookie dough balls onto your parchment lined baking sheet
- Place the baking sheets into the preheated oven and bake cookies for 10-12 minutes.
- Once the bottoms start to golden, remove the cookies from the oven and let cool on the baking sheet for 5 minutes before moving to a cooling rack to cool further.
- Repeat steps 5 and 6 until you run out of dough.
- Enjoy the cooled cookies with a tall glass of milk!
Pro Tips
If you want your cookies to look like they came from a bakery, you can press a few M&M's into the top of the cookie as soon as it comes out of the oven.
Storage Directions
Store leftovers in an airtight container at room temperature for 4-5 days.
FAQ
Add the full 1 cup of M&M’s to the cookie dough and then add more M&M’s to each cookie as soon as it comes out of the oven to make the cookies look like they have plenty of M&M’s on them. Adding the M&M’s to the top of the cookies before baking will result in the M&M’s cracking on top.
To make the cookies perfectly round, take a glass, or round cookie cutter, that is larger than the cookies and round out the cookies with it as soon as they come out of the oven.
Store leftover M&M chocolate chip cookies in an airtight container at room temperature for up to 4-5 days for best results.
You will know these cookies are done baking when they start to golden on the edges and the bottom. It may take 10-12 minutes.
This recipe works beautifully without eggs and still tastes delicious!
